Does anyone have a recipe for pumpkin cookies? (Cookies made with pumpkin puree) I thought that might be a fun gift for DD's teachers this week.

I have a very good recipe for pumpkin cookies. They are very easy to make. Everyone who has them thinks they are yummy!

Mix:
1 cup shortening 1 egg 1 cup sugar
1 cup pumpkin 1 teaspoon baking powder
1 teaspoon baking soda 1 teaspoon cinnamon
1 teaspoon vanilla 1 teaspoon salt 1 cup raisins
1/2 cup nuts (optional; I never use them)

Bake at 350 degrees for 10-12 minutes. Let cool.

Icing:
3 Tablespoon butter 4 Tablespoon milk
1/2 cup brown sugar

Heat until dissolved. Remove from heat.
Add 3/4 teaspoon vanilla and confectioner's sugar until the icing is thick enough to spread.

Pumpkin Chip Drops

1 cup butter or margarine -- softened
1 cup sugar
1 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
2 cups flour
1 cup quick-cooking oats
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup cooked or canned pumpkin
1 cup semisweet chocolate chips

In a mixing bowl, cream the butter and sugars. Beat in egg and vanilla.
Combine flour, oats, baking soda, cinnamon and salt. Add to the creamed mixture alternately with pumpkin. Stir in chocolate chips.
Drop by tablespoonfuls onto greased baking sheets.
Bake at 350 degrees for 9-12 minutes or until golden brown. Cool on wire racks.

2 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup butter or margarine -- softened
1 cup sugar
1/2 cup packed brown sugar
1 egg
1 3/4 cups pumpkin -- (15 ounce)
2 tablespoons orange juice
1 teaspoon grated orange peel
1/2 cup chopped nuts -- optional
Orange Glaze
1 1/2 cups sifted confectioners' sugar
2 tablespoons orange juice
1/2 teaspoon grated orange peel

Combine flour, baking soda and salt in medium bowl.
Combine butter, sugar and brown sugar in large mixer bowl. Beat until creamy. Add egg, pumpkin, orange juice and orange peel. Beat until combined.
Gradually add flour mixture. Beat until combined. Stir in nuts.
Drop dough by rounded tablespoons onto ungreased baking sheets.
Bake in 375 degree oven for 12-14 minutes or until edges are set. Remove to wire racks to cool completely. Spread each cookie with about 1/2 teaspoon Orange Glaze.
Orange Glaze: Combine confectioners' sugar, orange juice and grated orange peel in medium bowl until smooth.

Pumpkin Spice Cookies

2 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons pumpkin pie spice
1 cup packed dark brown sugar
1/2 cup sugar
3/4 cup butter -- softened
1 large egg
1 cup pumpkin
1 teaspoon vanilla extract
1 cup raisins
1/2 cup walnuts -- chopped

Preheat oven to 300 degrees.
In a medium bowl combine flour, soda, salt and spice. Mix well and set aside.
In a large bowl blend sugars with an electric mixer set at medium speed. Add butter and beat to form a grainy paste. Scrape sides of bowl, then add egg, pumpkin and vanilla. Beat at medium speed until light and fluffy.
Add flour mixture, raisins and nuts. Blend at low speed until combined. Do not overmix.
Drop by rounded spoonfuls onto ungreased cookie sheets, 1 1/2 " apart.
Bake 22-24 minutes until cookies are slightly browned along edges. Immediately transfer to cool surface.

Pumpkin Walnut Cookies

1/2 cup butter
1 1/2 cups packed brown sugar
2 large eggs
1 cup pumpkin -- cooked or canned
1 teaspoon vanilla
1 teaspoon grated lemon rind
1 teaspoon lemon juice
2 1/2 cups flour -- sifted
3 teaspoons baking powder
1 teaspoon salt
1 1/2 teaspoons pumpkin pie spice
1/4 teaspoon ginger
1 cup walnuts -- coarsely chopped

Cream butter and sugars until fluffy. Beat in eggs, one at a time. Stir in pumpkin, vanilla, lemon peel and juice. Resift flour with baking powder, salt and spices. Blend into butter mixture. Stir in walnuts.
Drop by tablespoonfuls onto greased baking sheets 2" apart.
Bake 375 degrees for 12-14 minutes.

NOTES : To decorate: Spread with a vanilla butter cream frosting.

Frosted Ginger Pumpkin Cookies

2 3/4 cups flour
1 tablespoon ground ginger
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter or margarine -- room temperature
1/2 cup sugar
1/3 cup molasses
1/4 cup buttermilk
Frosting
1/3 cup semisweet chocolate chips -- melted
Decorations for faces: candy corn,
cinnamon red hot candies, jelly beans,
licorice laces and other candies

Mix flour, ginger, baking soda and salt.
In large bowl with electric mixer beat butter, sugar and molasses until well blended and smooth. Stir in flour mixture alternately with buttermilk until well blended. Wrap dough, chill overnight.
Heat oven to 375 degrees.
On lightly floured board roll 3/8" thick. Cut out pumpkin shapes.
Place 1" apart on ungreased cookie sheets.
Bake 1 cookie sheet at time in middle of oven for 15 minutes until puffy and golden brown. Cool on sheets a few minutes. Remove to rack to cool completely.
Frost cookies except stems with frosting. Frost stems with melted chocolate. Before frosting sets, make "faces" with candies.
Frosting: In a small bowl with electric mixer on high speed beat whites from 2 large eggs and 2 1/2 cups confectioners" sugar until white, fluffy and spreadable. Beat in about 1/2 teaspoon yellow and 1/4 teaspoon red liquid food coloring until mixture is pumpkin colored.

Great Pumpkin Cookie

4 cups flour
2 cups quick-cooking oats
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 1/2 cups margarine -- softened
2 cups firmly packed brown sugar
1 cup sugar
1 egg
1 teaspoon vanilla
16 ounces solid pack pumpkin
1 cup semisweet chocolate chips
Assorted icings or peanut butter
Assorted candies, raisins and/or nuts

Preheat oven to 350 degrees.
Combine flour, oats, baking soda, cinnamon and salt. Set aside.
Cream butter. Gradually add sugars, beating until light and fluffy. Add egg and vanilla. Mix well.
Alternately add dry ingredients and pumpkin, mixing well after each addition. Stir in chocolate chips.
For each cookie, drop 1/4 cup dough onto lightly greased cookie sheet. Spread into pumpkin shape using a thin spatula. Add a bit more dough to form stem.
Bake for 20-25 minutes. Cool on wire racks.
Decorate using icing or peanut butter to affix assorted candies, raisins and nuts.
Variation: Substitute 1 cup of raisins for chocolate chips.
This makes 32 LARGE cookies.

1 cup butter

1 cup pumpkin
2 eggs
1 tablespoon vanilla
10 ounces white chocolate -- chopped
1 cup pecans -- chopped

Preheat oven to 300°
Beat butter with sugar, add eggs, pumpkin and vanilla. Add dry ingredients until mixed. Stir in chocolate and nuts.
Drop by spoonfuls on cookie sheets and bake for 20 minutes. Cool completely.
