PS during Christmas....

We will be at WDW Dec 17-26 and I am already trying to plan my PS. My question is will I have to be be REAL flexible for Christmas Eve and Christmas Day? I plan on calling 90 days out for both at 7am and want to be prepared, but, my problem is, I just don't know what to book! :confused3 My birthday is the 23rd, and so I wanted to book something nice for dinner that day also.
I guess what I really need is some good ideas where the to eat these days. We have the dining plan and it will be me DH and DD (1). I was thinking a nice breakfast somewhere Christmas morning but need ideas for dinner for both nights and lunch for both. By the time these days roll around hopefully we have been to all the parks so it really doesnt matter where we eat.TIA!

My birthday is the 23rd, too! We will be there the 18th-26th. I was thinking of having lunch in the castle on my birthday, but now that they've changed it to a character lunch, I'm just not sure. Maybe someone else has some ideas.

We have dined at Yachtsmans St, Yacht Club Galley and Boatwrights for xmas all have been wonderful.

I would suggest Citricos. This is a superior restaurant and the xmas decorations and music at GF are great.
 

We took our first holiday trip over Christmas 2003. Heres what we did for meals...

12/24-Breakfast at the Boardwalk Bakery before moving from the Swan to the Poly.
Early dinner(4:20 I believe) at Le Cellier with the Candlelight Processional Package.

12/25-Breakfast at CRT....very magical to be in the castle on Christmas morning.
Knowing we would be full from the all you can eat breakfast, we didnt plan a PS for dinner. Instead we just picked something up at the CBR food court while we were resort hopping. We also had a few drinks at the WL lounge before we went on our sleigh ride that night.

12/28(my birthday ;) ) Breakfast at the Main St Bake Shop and dinner at Kona Cafe.
 
I think most special for me was a somewhat early dinner with the late candlelight processional package on Christmas Eve. Shortly after the CP ended, illuminations went off. That was an amazing and special Christmas Eve! We ate at Beirgarten. I enjoyed it, but DH did not. Pick the restaurant you like, but get a relatively early meal so that you can get in the CP pckg. line early to get your pick of seating. Don't sit in the first few rows tho, you'll have trouble seeing the narrator. The music was amazing! The chior was amazing! The Christmas story narration was amazing! It wasn't who read it that made it special, it was the whole package of the "Candlelight Processional at night"! Be sure to do the later pckg. if your munchkin will handle it.
