PS and diabetic request?

Not sure if this is the right board but here goes. DD #2 is diabetic. I have made a number of PS for our upcoming stay. I have two questions. #1- should I inform the CM when I make the PS that we have a diabetic ? #2 We would like some nutritional info on the items on the menu (ie carbs) can they provide that?
If this should be on disabilities board I apologize to the monitor in advance.
 
You should try posting this on teh DISabilities board as well, I'm sure you'll get lots of help there. What I would recommend is calling WDW dining and asking for each restaurant you plan on eating for their individual phone number. I'd call each restaurant and ask them individually for the information you need. Also, give them at least 24 hours notice that you are coming in with your diabetic child, so they can have ample time to make arrangements for any specific meal you need. I have found all WDW restaurants to be VERY accomdating to all food related incidents that come up.

I dont think you should have a problem with diabetic options at any of the restaurants. You may have difficulty getting a carb count though. You may just have to rough guess it on your own using what you know from carb levels in each ingredient.

Sugar-Free Chocolate Mousse
Served at Restaurant Akershus
Norway Pavilion, Epcot Center

Ingredients:

Sugar Free Dark Chocolate 1 lb
Heavy Cream 1 quart
Egg Yolks 7 ounces
Equal ½ ounce


Method of preparation:

Whip cream to soft peaks. At same time melt chocolate in separate bowl. In another mixing bowl add equal and egg yolks. Beat until double in volume. Add whipped cream to egg mixture by folding them together. Then gently fold chocolate into other mixture. Place into refrigerator over night. Use extra shaved sugar free chocolate to garnish.


Yield: 8 servings



It is soooooooooo yummy!!!!!!! If you don't make it at home, it is a must when in Epcot!!!!!! :) :) :) :) :)
 
Son # 1 is diabetic. We have always had good luck calling the the restaurants directly, about 1-2 days ahead. We were usually requesting sugar free dessert. CRT, San Angel,Sc i Fi, and Coral Reef were particularily creative with our requests. Sometimes the chef would come out to talk with us to be sure everything was OK. Good Luck !
