(showing my age here) but i well recall it before it was "trendy" as something mom purchased regularly as something for easter. it along with the "italian candies" almond candies(that came in individual boxes with a communiom tupe wafer) were popular to give up for lent, so we hit the stores the morning of "good friday" to purchase for easter brunch.

we did too, but i remember when it got more commercialy popular (non italian restaurants started using it in more dishes) we were thrilled to start finding it in supermarkets (used to have to go to the "itialian deli" to get it as a kid).

This past weekend we had mushrooms stuffed with mozzarella and Prosciutto - outstanding! I love prosciutto - I think you could wrap it around cardboard and I'd still love it!
