I think in general, versions of what constitutes doneness has become so skewed that a lot of restaurants now post pictures of what they mean by rare, medium rare, ect. I think you like yours medium to medium well!
Rare: Basically char the sides and eat. Cold in the center, if done right.
Medium Rare: same process, but let the center warm up a bit.
Medium: Cook to pink.
Medium well: touch of color left in center.
Well: Everything tastes the same!
Truth be known, I'm not sure Prime Rib can really be served "rare" per se, can it? Prime rib is roasted and sliced. It's really a roast, not a steak......Even when you order it rare, it's warm in the center, and if it's warm, it's not rare.
I don't know. I just know I like mine red and juicy!

If I'm feeling really adventurous, I'll order a steak medium, otherwise it's medium well or well done. I don't like food that talks back to me!
