I think in general, versions of what constitutes doneness has become so skewed that a lot of restaurants now post pictures of what they mean by rare, medium rare, ect. I think you like yours medium to medium well!

Rare: Basically char the sides and eat. Cold in the center, if done right.

Medium Rare: same process, but let the center warm up a bit.

Medium: Cook to pink.

Medium well: touch of color left in center.

Well: Everything tastes the same!

Truth be known, I'm not sure Prime Rib can really be served "rare" per se, can it? Prime rib is roasted and sliced. It's really a roast, not a steak......Even when you order it rare, it's warm in the center, and if it's warm, it's not rare.

I don't know. I just know I like mine red and juicy!

I order mine medium rare. When we were in Florida in January we had dinner one night at Barnacle's in Ormond Beach (we'd eaten there on previous trips and loved it). When my prime rib came I cut into it and it was obviously "well done" and very, very dry. I gnawed on a couple of bites, and wasn't happy at all so when the server asked how everything was I did something I just never, never do...I sent it back. When I'm paying for an expensive cut of meat, I want it to be served as I ordered it, medium rare. The server looked at it and totally agreed with me and graciously took it back, and in just a few minutes I had another one placed in front of me, perfectly cooked to medium rare so I was happy. :)

Yes, the idea of doneness varies greatly from restaurant to restaurant. We go to our local microbrewery for their 9.99 prime rib nights and medium rare is exactly that.

Go to outback and medium rare is red, and rare is cold...but I'll still eat it!

Ewwwww!!!! I can't even stand to eat at the same table as someone having a rare steak. It turns my stomach just to think about it. :p If I'm feeling really adventurous, I'll order a steak medium, otherwise it's medium well or well done. I don't like food that talks back to me! :eek:
 
Any properly cooked piece of beef will arrive at the table under it's own power!
 
Medium Rare for sure....just warm and dark pink. Oh, and ....
Don't forget the horseradish, not the whimpy creamed stuff, but the strong straight kind that makes your eyes water with just a whiff....ahhhh, it is making me hungry!
 
It ought to be a crime to cook a good piece of beef well-done! Medium-rare to rare for me!

LOL, I can't stand the thought of it bleeding on my plate and then eating it. noooooo, I need it done. Not burnt, just done.
 
Medium to Medium well here. I like it pink, but bleeding. It depends on the restaurant. Most of the chains err on the side of rare, so I order med-well. The nicer restaurants arpund here usually get it right, so I can order medium.
