Pound of Ground Beef Meals?

This is my recipe for cabbage rolls halved. I actually made these last night but used ground round instead of ground beef because our local meat market had it on sale for $1.99lb

1 pound ground beef
1/2 pound breakfast sausage
1 clove of garlic minced
1/2 medium onion minced
1 egg

Mix this together and form into football shaped loaves small enough to roll in a cabbage leaf.

Roll meat into softened cabbage leaves.

Put a thin layer of tomato sauce on bottom of baking dish, arrange cabbage rolls in a single layer, and top with more tomato sauce. Cover with foil.

Bake at 325 for about 2 hours.

These are even better the day after. My DF who doesn't like cabbage loves these. I serve them with mashed potatoes or au gratin spaetzle.
 
My parents did a Mushroom Goulash when I was younger.

a pound of pasta
a pound of meat
1-2 Can of Cream of Mushroom
salt and pepper

Their version:

Begin to boil the pasta
Med Heat Brown the meat
Drain most of it
Open a 1 1/2 cans of CoM
Add one can of water stir.
Turn down to a simmer.
You can always add more water/CoM to get the to desired thickness of the cream
Drain the water and then add the pasta.

This is how my mom made it. Now to add flavor to a pretty boring dish.. lol its sometimes is:

OH LOOK this X spice! (personally I like garlic/onion powder and something green.

For color you can add parsley, basil, really just about anything. My kid LOVES it. I have added real mushrooms and I have thought about a vegi like peas. We tried broccoli, but that didn't go over well.

We use the same recipe, we also make a regular goulash, beef, pasta and a jar of sauce.
 
Brown 1 lb ground beef.
Mix together with chopped green pepper, 1 chopped onion (I like vidalia), 1 can italian style chopped tomatoes.

Leave in crockpot on low for 4-5 hrs.
Then, add a small can of tomato paste and 1/2 box of spiral cooked pasta during last 10 min of cooking.

I serve with parmesan cheese on top.

This New England favorite tastes better the 2nd day; so often I double the recipe.

This is a favorite in my family. The only difference is that we use elbow macaroni.
 

I make garbage burgers. Hamburger, 1C A1 steak sauce I usually use the bold and spicy one, 1/4C relish, small chopped onion, bread crumbs - I use enough crumbs so that the meat is not too wet otherwise the patties will not stay together. Form into patties and grill. YUM

You can serve this as burgers on a bun or skip the bun and serve the patty along with rice or mash potatoes and a veggie.
 
My father made what he called "Man Overboard". He made little tiny meatballs & browned them up good. Cook egg noodles till they are almost done, drain. Take 2 cans of Campbell's Cheddar Cheese soup mixed with 1 can of beer (whatever he had on hand), I use 1% milk and cooked it up, mix in the meatballs & egg noodles. Simmer till noodles are done.

Serve with garlic bread.

A favorite here is meatloaf
2lbs ground beef
2 eggs
1 box of stuffing mix
1c bbq sauce
I add different things to it like onion, garlic, cheddar cheese etc. depending on what is around.
 
One of my family favorite meals is crack slaw lol




1 lb ground turkey or beef
2 cloves garlic, minced or garlic powder
3 green onions, sliced or yellow or red onions
1 lb broccoli slaw or regular coleslaw
1 TBSP lite soy sauce
Crushed red pepper flakes, to taste (optional)
mushrooms (optional)


Add the meat, with the onions and mushrooms until brown
Add the cole slaw mixture
Add the soy sauce

(I have also done this with just some BBQ sauce instead of the garlic and soy sauce very yummy)

The version of Taco salad that I grew up with and still make today.

1lb ground beef, cooked and drained
1 head iceberg lettuce- cut up
1 can kidney beans- drained and rinsed
1 tomato- chopped
1 can whole olives (or sliced if you prefer)
1-2 cups shredded cheddar or Monterrey jack cheese (depending on how much you prefer
tortilla chips, slightly broken
Thousand island dressing

Mix all together and enjoy.


Taco pizza
empanadas (the goya frozen dough disk work good)
 
Taco Casserole

1 lb ground beef or turkey
1 pkg taco seasoning
1 lb dry pasta (prefer ziti for this one, but it really doesn't matter)
2 cups shredded cheese (cheddar or Mexican)
1 can of cheddar cheese soup
1 cup of milk
salsa, sour cream, chips as garnish

Preheat oven to 350. Brown meat, drain, mix with seasoning and as much water as it says on the seasoning package. Cook and drain pasta. Mix soup, milk, and seasoned meat in with pasta and stir until well-combined. Put half of mixture in casserole dish, sprinkle half of the cheese, other half of mixture, top with remaining cheese. Bake 20 minutes or until cheese is melted and bubbling on top.

I usually serve with salsa, sour cream, and sometimes broken taco shells or even Doritos as garnish. The salsa is also good mixed into the whole mixture. I have doubled and tripled it with no problems. It also freezes well.

Tamale Pie

1 lb of ground beef or ground turkey
1 jar of salsa*
1 can Black Beans (rinsed and drained)*
1 can Corn (drained)*
1/2 cup shredded cheddar cheese
1 box corn bread mix (I prefer Jiffy)

1. Preheat oven to 350 degrees
2. Brown ground beef and drain.
3. Return ground beef to pan and add salsa, black beans and corn.
4. Simmer for 10 minutes.
5. While mixture is simmering, prepare cornbread according to directions and set aside.
6. Add cheese to meat mixture.
7. Pour into 8 x 8 square pan
8. Pour cornbread over meat mixture.
9. Bake for 30 minutes or until cornbread is golden brown.

Serve with sour cream

* - You can substitute a jar of Black Bean and Corn Salsa for these ingredients.
 
when I was earning my badges in girl scouts I found a recipe book for kids and made the following which I loved and made for the kids I babysat all the time:

1 lb ground beef browned and strained.
1lb egg noodles cooked
2 cans of vegetarian vegetable soup (tomato soup works fine but I liked the extra veggie- but you can add separately)

Mix together in a casserole and back for 30 mins at 350. I'd top with whatever cheese was avail- parmesean, mozzarella or cheddar. Sometimes top with french fried onions broken up or taco shredds.

2 tubes of crescent rolls (8 each)

Brown 1lb meat (with onion/mushroom/peppers if desired)
Spread 1 tube of crescent dough on cookie sheet, top with meat. Top meat with shredded cheese. Open 2nd crescent tube and lay over the cheese. Pinch together all sides. Bake at 375 for 14 minutes.

Yum.

I make something similiar. I use my Pampered Chef round stone and I make Taco Ring. You make taco meat as usual with the seasoning mix. Then add shredded cheese..as much as you want really. Let that melt good and stir it well so it is all mixed together. You take the crescent rolls and lay them in a circle overlapping with the points OUT. Place the meat mixture on each piece of the wider section of the crescent roll. THEN take the pointed end and fold over and seal. Once you have done this...it looks like a ring/wreath. Bake on 350 I believe and I serve spanish rice and warm cheese queso to drizzle over it. YUMMY

I use 1 pound of groundbeef and 2cans of the rolls.
 
All the items mentioned are great but I was directed to a site that I use often whenever we are looking for something new. Go to WWW. Recipezar.com Follow the signs. Type in the protein and I use 5 star recipes only. I usually find two to three of the best for an item and look at ingrediants and even combine some. Takes the work out of it.
 
Just made this last night and it was a hit for my entire family and so easy. I got it off Tiffany's site, Eat at Home. I love, love that site!!!

Black Bean Taco Bake (I think that is the name of it)

1 lb. ground beef (I used ground turkey)
1 jar black bean and corn salsa (used 24 oz. jar)
1 can black beans, drained
8 corn tortilla shells, cut into about small pieces
2 cups shredded mexican cheese blend

Brown the ground beef, drain. Mix beef in bowl with salsa, beans, tortilla cubes and cheese. Pour into greased 13x9 baking dish, cover with foil. Cook at 350 for 30 - 45 minutes.

I served mine with mexican rice also. DH put his over lettuce and added tomatoes. It was a hit, even with my DD 9 who doesn't like tacos. She ate it all!
 
Here's another one I use when I'm in a hurry.

Ground Beef Stroganof

1 lb. ground beef or turkey
1 Garlic clove (I use it to for flavor, you don't have to)
1/2 onion chopped
1 can cream of mushroom (I use 98% fat free)
1/4 can of water
1 big dollop of sour cream
6 oz. egg noodles or 6 servings of rice

Brown ground beef with garlic and onion. Drain grease, add cream of mushroom, water and sour cream. Simmer for about 5 minutes, uncovered.
Serve over egg noodles or rice. It's my go to meal in a hurry!
 
Mom called this stroganoff.

Brown a pound of ground beef (you can add some onions if you want). Drain the ground beef and add a can of cream of mushroom soup and half a soup can of milk. Let it cook for a few minutes. Serve over cooked noodles or mashed potatos.
