After the beef is ground I add a squeeze bottle of pizza sauce, chopped green peppers & onions, mushrooms, sometimes a bit of garlic. Before serving I stir in a small amount of shredded cheese. I serve over corn bread topped with shredded cheese.
Cincinnati Chili
1 large onion chopped
1 pound extra-lean ground beef
1 clove garlic, minced
1 tablespoon chili powder
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/2 teaspoon red (cayenne) pepper
1/2 teaspoon salt
1 1/2 tablespoons unsweetened cocoa or 1/2 ounce grated unsweetened chocolate
1 (15-ounce) can tomato sauce
1 tablespoon Worcestershire sauce
1 tablespoon cider vinegar
1/2 cup water
1 (16-ounce) package uncooked dried spaghetti pasta
Toppings (see below)
In a large frying pan over medium-high heat, saute onion, ground beef, garlic, and chili powder until ground beef is slightly cooked. Add allspice, cinnamon, cumin, cayenne pepper, salt, unsweetened cocoa or chocolate, tomato sauce, Worcestershire sauce, cider vinegar, and water. Reduce heat to low and simmer, uncovered, 1 1/2 hours. Remove from heat.
Cook spaghetti according to package directions and transfer onto individual serving plates (small oval plates are traditional).
Ladle chili over spaghetti and serve with toppings of your choice. Oyster crackers are served in a separate container on the side.

Makes 6 to 8 servings.
Tater Tot Casserole
1 pound ground beef, browned
1 can french style green beans, drained
French fried onions
tater tots
2 cans cream of mushroom soup, mixed with about a half a cup of milk
shredded cheese
Layer the ground been, then the green beans in a casserole dish. Sprinkle enough french friend onions to your liking, then layer with enough tater tots to cover. Pour on the soup mixture. Bake at 375 for 20 minutes or until bubbly. Add shredded cheese and bake until cheese is melted.
Do you put the tater tots in frozen or do you cook them first separatly?
Ok, I hope this catches on because it is the simplest meal that we ever make. My sister-in-law Debbie made it up and it is very tasty. She browns a pound of ground beef and then makes a package of that Lipton Spanish Rice. Mixes them together and for some reason it really does have a great taste. She did not tell anyone what or how easy it was when she brought it to a get-together and we ended up all asking her to tell us her recipe. It was hilarious when we found out how easy it was.
