:offtopic: Ok, so this is a little OT. Its not related to Disney, but it is related to Families... I would love to share Grill recipes with my fellow DISers!

:beach: Its grill season - finally! Turn off the ovens, fire up the grills and enjoy Summer! Lets share recipes for those nights that you are looking for something new and different. Burgers, dogs and Brats are great, but by the end of the summer I could care less to eat another cheese burger!! Exact recipes are great, but ingredients and approx measurements will do too! :surfweb:

So, here is my question: What things do you cook on the grill that are easy, different and yummy?

:sunny: Here is one to start:

zuchinni and/or summer squash - Sliced up - enough to feed your group.

1 Med onion sliced up

1 can of diced tomatoes, or use fresh, don't use all the juice if you use canned, may leak from foil (optional - disregard if you aren't a fan of tomatoes)

Add some chopped garlic, salt and pepper, a dollop or two of butter and

2 ice cubes (especially if you dont use the juice from the tomatoes) - helps steam the veggies and keep things from burning to the foil

Get a long sheet of aluminum foil; double it over if its the cheep dollar store brand like I have.

spray with Pam or butter or what have you. spread above ingredients and mix up. match ends of foil length wise, roll and pinch til tightly sealed. Do same to ends of foil making a packet.

Cook on top shelf of grill or over low/med heat for about 20+ minutes depending on your much and crispness you are looking for...

Marinade salmon in Grey Poupon Dijon Creamy Mustard
Place on the grill (after spraying non stick grill spray) or on a disposable grilling tray and coat with the grey poupon and fresh dill.
Grill until flaky and cooked.

This is a great idea and this thread needs a bump!


We like to marinate chicken in Paul Newman's Lime vinagrette dressing and grill it! Very yummy! If you do extra chick breasts they can be used for grilled chix sandwiches or to add to salads or pasta salads to stretch those grocery dollars.
 
We smoked a pork loin roast the other night and it was fantastic!!

We prepared a rub:
1/3 c smoked paprika
1/4 c pepper (I used about 1/2 of that)
1/4 c sugar
2 T salt
2 t powdered mustard
2 t cayenne pepper (I used some red pepper flakes)

This will do about 8 pounds of pork.

I put it on about an hour before we started smoking. Takes about 1 hour ish per pound of roast. We did one that was about 2 pounds and..YUM!! So juicy and tasty!!

4 small boneless skinless chicken breast halves (1 lb.)
1/4 cup KRAFT Sun-Dried Tomato Dressing, divided
1 tomato, finely chopped
1/2 cup shredded mozzarella cheese
1/4 cup chopped fresh basil or 1 tsp. dried basil leaves


PLACE large sheet of heavy-duty foil over half of grill grate; heat grill to medium heat. Meanwhile, place chicken in resealable plastic bag. Add 2 Tbsp. dressing; seal bag. Turn bag over several times to evenly coat chicken with dressing. Refrigerate 10 min. Remove chicken from bag; discard bag and dressing.

GRILL chicken on uncovered side of grill 6 min. Meanwhile, combine remaining dressing, tomatoes, cheese and basil.

TURN chicken over; place, cooked-side up, on foil on grill. Top with tomato mixture. Close lid. Grill 8 min. or until chicken is done (165ºF).


This recipe is so good! We often make extra bruschetta topping and put it on a lettuce salad or make real bruschetta with it a day later.
 
I don't know specifics, but I take a steak, whatever my husband buys as he's the steak guy ;), and cut it up intil little cubes. Marinate it in a teryiaki sauce of your choice, put it in a tinfoil packet with some butter, peppers & onions, and put it on the grill for like 15-20 minutes. Put it over rice after it's cooked & I've got pepper steak! It's soo good! I got the idea, I believe, from Kraft's website. I'm sorry I don't know the specifics, but my husband usually does the cooking of it since he's out at the grill with his steak at the same time.
 
One of our favorites is very simple: Just alternate cubes of chicken and pineapple on bamboo skewers (soaked in water beforehand), and grill. There's just something special about grilled pineapple.
 
We marinade chicken breast in a gallon ziploc with about 1/2 bottle of Italian salad dressing. It is super yummy grilled!
If we are late in planning, the chicken breast are still a bit frozen in the middle and that helps them not to dry out when grilling.
DH says the key is to grill everything on med/low and use the top rack.... ??:cool2:
 
Mine is so simple, but soooo tasty. You can do it with chicken, shrimp, or any white flakey fish. Its 1 part orange marmalade to 1.75 (give or take!) parts hoisen sauce. Its sweet and smoky - not at all spicy, but you can always change that by putting some red pepper flakes in there or something. Don't marinate it, just slather it on when the food is on the grill.
 
:surfweb: I may use one or two befor the weekend is out....

Another classic is potatos in foil packets - either cubed or sliced, red or yukon potatoes, its all good - add some garlic, salt, pepper and butter, an ice cube or two and ta daaaa - a great side for dinner!! ....and No mess or dishes - even better...

Can also add onions, parmesan cheese or whatever other ingredients you like... so good and so simple!! I often will make extra and use the left overs for Potato salad - super easy and what great flavor!!

pizza on the grill: inexpensive and delicious! I make my own dough, but to save time I bet you could use frozen bread dough.

1 package active dry yeast proofed in one cup warm water for 10 mins with pinch of real sugar (it should bubble/fizz a little to prove your yeast is ok!)

add to that:
2 teaspoons kosher salt
1 tablespoon olive or regular cooking oil
3 1/2 cups flour ( I use a mixture of whole wheat flour and white flour)

knead 5ish mins, put in greased bowl, cover with damp towel for 1 hour, until doubled

punch down, knead in garlic and basil and let double again...yes another hour:rolleyes1 but you only spent 50 cents on ingredients so far!

divide into portions (I do 3), stretch into pizza shapes, brush with oil and put directly on grill for a few minutes
(don't let it burn!)

flip w/ big spatula

oil/brush again, add toppings (sauce, fresh basil, cheese, any leftover meat/veggies)

put cover on grill to melt cheese

YUM!
Great alternative to hot dogs on the grill, healthier, :thumbsup2and is saving me some $ - we used to spend 25+ a week on take out pizza. Kids love to help too.
 
Zucchini/Summer squash/eggplant

brush with olive oil, sprinkle with salt, pepper, garlic, onion powder grill for several minutes right on the rack.

Corn on the cob

soak corn in water for several hours before hand. Throw directly on grill rack (husks and all) peel, clean and eat.

Beer can chicken. Rub chicken all over with whatever rub you like (I buy a pre-prepared one at the grocery, you can also use BBQ sauce and baste occasionally) open a beer can. set the chicken upright on the beer can in a pan grill for the amount of time appropriate for the chicken's weight. The beer steams the chicken form the inside out making it very moist.

Something that I love to grill is jalepeno poppers. I take 10-20 large peppers and half and core them. Then I take whipped Phili cheese and mix it with colby jack shredded cheese. Then spead the cheese mix into the pepper halves and wrap with smoked bacon. Usually half a piece is good. Then grill on low heat for about an hour. I usually put the peppers on the top rack and put a drip pan on the bottom to avoid grease fires. I cant get enough of these little treats!
 
There was one night that I broiled a steak at like 11:00 at night and set the smoke detector off. It woke everyone up.

It was still totally worth it.

I also like to marinate chicken breasts in margarita mix overnight. It tastes terrific and super moiste!
 
Ok, so we had Turkey Burgers tonight on the grill fo rthe first time in a long time!! Therw ere pretty good -

Mix one pkg of ground Turkey (1 lb?)
with a few dashes of worsteschire sauce
added some spices - salt, pepper, little squirt of yellow mustard, garlic and onion powder

We didnt have any bread crumbs so I crumbled one hot dog bun into the mix to help keep it moist

Made patties and paced them on the top rack of the grill over medium heat to keep them from burning...

So good and such a great change!! DH said he really liked them and we will have to do them again!! :thumbsup2
 
A nice filet of salmon
Jar of store bought pesto sauce

Place salmon on heavy duty foil after brushing bottom of fish lightly with olive oil.
Spread generous amount of pesto sauce on top of salmon.

Grill and enjoy!

I serve this with some yellow saffron rice and a strawberry, glazed pecan and feta spinach salad with a homemade strawberry vinagrette (balsamic vinegar, olive oil, 2T strawberry jam, salt and fresh pepper to taste)
