There was a thread on this about a month back. We were on the port side. The general concensus was that the view alternated based upon which side the ship docked so it was about equal- land and water. Most said either side was beautiful and I agree.
It doesn't make any difference because you can't control how the ship will dock. For example, we've cruised with DCL twice, both times with the Magic. We pulled straight into Castaway once and backed in the other time. So, if we had chosen a cabin based on our first experience, we'd wrong.
We had a stateroom on the port side for our Western Cruise. We took a walk on deck after the show and saw a lot of lights from the Florida Coast off the Starboard side of the ship. We woke up Monday morning to see Cuba off the port side (actually it was an island off the coast of Cuba); I thought that was interesting - being so close to Cuba. On the way home we were on the side to see the Florida coast and again saw lots of lights.
Castaway Cay is a tossup- depends if the ship pulls in or backs in.
