We are tracking with two other staterooms. The other two rooms had silver status and got a PAT of 11:00. We are first timers and got 11:30. We are traveling together to the port. Will we be able to check in at the same time as then? I heard on a vlog that we would be able to check in but be given a later boarding group number than the people who has PATs of 11:00 or 11:15

That is true, your boarding number is tied to your PAT. You can board together, but you would need to board with the highest boarding number. Once they start, boarding goes very fast, so you won't have to wait long.

Theoretically, if the terminal is too full you may be asked to wait until 11:30 while your 11:00 travelling companions are allowed in. I don't think I've ever heard of that happening though.

Once you are in the terminal, you should be able to check in together if they don't want to use the Castaway Club line.
