What I found per the menu ...
Mixed Fruit Cup
Whole fruit = orange, apple, banana
Pineapple Cup
Carrots & Celery
Carved Rotisserie Turkey Breast - if not too much salt
Seared Salmon - if not too much salt
Roasted Vegetable Sandwich - if not too much salt

Should we not eat there if there are not NO salt options ?

Well sounds like you don't care to eat there so pick somewhere else based on your individual diets.

With that said... if you actually look at the menu you'll see there are items like a western omelet, a plant based burger, veggie sandwich, chilled shrimp/chilled chicken salad, grilled chicken sandwich, pot roast, green beans, sweet potato fries etc.

When you consider what you could be eating at Disney I don't feel that those options are "unhealthy". Certainly no more so than any local casual restaurant.

Ummm...pretty much any quick service place will use rather too much salt in just about every dish. Your best bet would be salads with dressing on the side. Or you could possibly get plain chicken/fish with no sauce or sauce on the side so you can control your toppings a bit more.

Even table service food will be high in salt and oil. One trip we went DH was battling cancer and trying to adhere to a pretty stringent diet avoiding meat, salt and sugar. The chefs at TS places did the best they could. He ate a lot of plain steamed fish with no sauce or sauce on the side. Sometimes a plate of fairly plain veggie sides.

The next trip he gave up on worrying too much about salt although still stuck to plainer things like seared fish/seafood/tofu, as much vegetables as possible, noodles in broth. He did his best but certainly he had way, way more salt than we consumed at home.

It is possible to control calories and even aim for more vegetables when eating out. But extremely difficult to control sodium other than the usual portion control and trying to make better choices. Your best bet at every place is to avoid sauces or ask for it on the side and just choose plainer options whenever possible.
