Get two studios at SSR if they are still available. Grownups get their own space, but you probably can be close to each other. Just a short walk to Disney Springs.
Yes, it would be over Veterans Day weekend. I was hoping this wouldn't be too crowded, as far as holiday weekends go...
Budget-wise, if we did 2 rooms, we would be in Pop Century or Coronado Springs, probably. (2 rooms at AKL is not in the budget; it is doable only if we rent points.) I've heard Pop Century is especially noisy, though?

I have stayed at Coronado for a conference and found it to be lovely! The rooms are being renovated right now and from the pics they are gorgeous. I stayed in the Casitas section, building 4. The bus stop was right outside my building, it was the most convenient bus stop of any of the resorts I have stayed at. There are only four stops at CSR and they go quickly, then you are off to your destination. I thought the bus system was the best of all the properties that I have stayed at, including all the Deluxe Resorts.
The theme pool is fantastic with plenty of shady spots. Each building group has it's own quiet pool. I thought the Casitas was quite pretty.
Coronado Springs would be a great spot for two rooms, even with all of the construction.

We’ve stayed at both Pop & CSR in the last year (out of DVC points!), and even though I like Pop, I’d give CSR the edge for your family if you don’t go the DVC 1 br route. More variety in food options (QS & TS), better pools (I can personally vouch for the fun slide at the main pool), and convenient bus transportation. The construction wasn’t disruptive to us at all, even though we were in Ranchos 7B and walked past it every day.
I disagree that you would not be comfortable in a 1 BR. I think the 1 BR at AKV was very comfortable for five of us. The extra bathroom and full kitchen area make it much more spacious than a studio. I also like that it gives a nice area to spend time in during the day.

A family of five may be comfortable in the 1BR, but most grandparents would likely want their own room apart from the adult child and their family. Some may be fine with it, but likely most would not find this to be a relaxing vacation.
With the renovations of the rooms at Pop, I think it looks really cool! I know it's not for everyone though, and the pools are pretty basic.

With their being a separate bedroom and 2nd bath you do get quite a bit of separation. I was there with extended family. We had two adults and three kids. So I was in the bedroom with my son, and they were in the living area with the pull out and sleeping chair.
