We just got back from vacation. We did the Luau at the Polynesian and loved the chicken so much that we asked our server how it was prepared. She came back with a printed recipe card. I did a quick search and didn't see it so I thought I'd share the "official" recipe.
Oh, and just for the record, I have made it as instructed, and also did it on the grill with direct and indirect heat (seared it over the coals, then moved it to the other side of the grill without coals)
Disney's Polynesian resort Luau Chicken
Use chicken cut into pieces with bones for better flavor
1 TB fresh minced garlic
1 TB fresh chopped Rosemary
1/2 TB celery salt
3/4 cup soy sauce
1/8 tsp ground cumin
2 TB Dijon mustard
1/4 tsp salt
Black pepper to taste
Hot chili sauce to taste
2 tsp Canola oil
Mix 1st group of ingredients in food processor until a smooth paste, slowly drizzle in oil.
Marinate chicken for 12 hours
Bake at 350 for 40 minutes, basting throughout cooking.
Chicken is done when golden brown and internal temp is 165
