Poly or the Four Seasons for NYE

No. You should be fine. Last year, I changed a few ADR's a few weeks after my 180 date. There was still availability but it was already quite limited for the evening hours. The year before that I didn't even try to get an ADR until October for my New Year's trip. I managed to get one ADR in Epcot for mid afternoon. There was nothing available in the evening. I kept checking and a few restaurants popped up for late at night, but it was too late for us.
That's good to know, I don't think I've ever gone on a trip where I didn't change my ADRs around a bunch. What time do you think I should book dinner for to watch the 6pm fireworks? I'm okay watching them and then eating, but will that cut it close for us getting back to watch the midnight fireworks at MK? I'm trying to visualize the sea of people and how difficult it is to get around.

Assuming you're taking the monorail from Epcot to the MK, I think it might be better to eat right after the early fireworks at Epcot because I'd think many families might head out right after the fireworks and the monorail will be bogged down.

I could be totally wrong though. I'm the kind of person who stays in the park on NYE. Maybe someone else will chime in on this.

That makes sense to me. Thanks!
