I booked brunch and dinner, but we are on a 7 night cruise. Not sure I'll keep the dinner ressie though. We have a few fine dining Italian restaurants that we frequent and I'm afraid we will be disappointed.


To be fair, this is a little like asking which kid is your favorite. Brunch and dinner are very different experiences at Palo, and that makes each meal special.
Dinner tends to be a romantic or semi-romantic evening (semi- if there are four or six people at your table) It is a several course meal served at the table in an upscale setting. Like going to the nicest restaurant in town for your anniversary dinner.
Brunch is a more casual affair with an explosion of food. A huge buffet, and the kitchen will also deliver made-to-order items, like veal saltimboca.
We always do both brunch and dinner. However, since you forced me to choose, I would, just barely, choose brunch.

On wich time you can book a palo brunch or dinner? We live in Europe so we are in a different time zone. Thanks in advance!
The excursion (excursions/adult dining/spa/nursery hours) booking window (as well as the online check in window) opens at midnight Eastern (USA) time. Sorry, don't know what time that would be where you are.
The date it opens depends on your Castaway Club level:
Platinum/Concierge - 120 days out
Gold - 105 days out
Silver - 90 days out
First time cruiser - 75 days out.
