This isn't what OP is talking about, though; many people in the parks, I've found as well, are considerate of other people taking photos, and so will stop or go around you. OP recognizes this, and says that they'll make an effort to face walls, stand off to the side, et cetera, lest others think they're trying to catch that perfect shot, and not that perfect Pokémon.![]()
Marciemi mentioned that sometimes the pokemon just happens to be in a photo spot/open space, implying that they couldn't move their phone without losing the pokemon - thus the suggestion to turn AR off since they would no longer have to keep their phone pointed out, and could instead point it at the ground

I've been in all 4 parks & Disney Springs (and Typhoon Lagoon) several times each and really don't see a huge difference between them in terms of available Pokemon & Pokestops so I wouldn't let that factor in your park/days decisions. A lot of times it just comes down to how many people are dropping lures as to how productive your day is - weekends & evenings seem better than mornings during the week when most people there are focused on rides.
