It's so incredible to see all of you here!

I had an exciting (not!) morning.....brought my van to get a bumper estimate from when I was rear ended, stopped and had pizza for lunch, and got a key made since Jake keeps losing his. Later it's errands with Jake and dinner out somewhere--mom/son evening. Wow, I really know how to have a good time!

I think you would be ok with the chicken. I'm not an expert, but do tend to err on the side of caustion with that stuff, and I think I'd re-freeze and use it.

The chicken will probably be tough refrozen. I would simmer it in salsa now, shred all of it, freeze it in individual serving bags, and make her eat tacos for the next few weeks

That was my thought too...it's not like she threw it on the counter and walked away. And it has only been a few days....would be fine to cook and eat now, so I can't see why you couldn't re-freeze. May not be as tender as keeping it frozen from the get-go, but I can't see it making you sick.

I'm guessing made, since she has been out most of the day, and you never know when a buyer might want to go see it. Then again, since Teva is oogling lesbians, maybe it's easier to keep it unmade.

Latest at work is showing the stupid lead how to reply to all on an email! She didn't understand why it only went to one person, not to everyone! My boss is going to talk to her boss and have tis stupidity stopped! He doesn't want a crazy lady (or more crazy) on his hands!

On the homefront, my lovely DD17 put 13 pounds of frozen chicken from Costco in the refrigerator on Sunday, not in the freezer! Of course it's all thawed now! Andrew looked at a food handling site that said we could freeze it again. Any thoughts?

Caro the best thing you could do with the chicken is to throw it all in the crock pot tomorrow before work and when you get home freeze it. You will have about 2 or 3 months to use it but I do this all the time. Leave some of them whole and with the rest cube or shred it. This will also help you in the future time wise.

I would cook it now and then freeze it for later use. Might be a weird texture if it's refrozen and who wants to take chances?

The boys and I had a great afternoon at the park with some friends we have not seen all summer. It's perfect weather here so that is a delight. Days like this are why I live in MN. Tomorrow we go to the State Fair. I have warned my DH that I am NOT following my sugar free diet and he better not hassle me. MAn, that irritates the heck out of me. I am a grown up. I can figure out that a smoothie from McDs is going to have sugar in it. Bite me.
