PMS in a Healthy Handbasket--Thread Abandoned--Move on, Nothing to see here

Ok, here's the recipe just as it appears in the book, then I'll give you my own personal variation.

Cheeseburger Pie

Ingredients:
Butter for greasing baking dish
1 pound ground beef or turkey
I small onion, chopped
I cup heavy cream
3 eggs, beaten
4 cups shredded cheddar cheese
salt and pepper

Preheat oven to 350 degrees. Butter a 13 x 9 glass baking dish, set aside.

Brown ground beef in a large skillet over medium heat. Add onions and cook for an additional 3 minutes, stirring constantly. Remove pan from heat. Add cream, eggs, and 3 cups of the cheese. Stir well. Season with salt and pepper. Pour mixture into prepared baking dish. Sprinkle with remaining cheese. Bake for 15 to 20 minutes, or until cheese begins to brown.

Suzanne also suggests adding or substituting veggies, cheeses, or seasonings that you like. I left out the onion, added a can of diced tomatoes (drained), added some oregano, basil, and garlic, and used mozzarella instead of cheddar. I didn't have 4 whole cups of cheese - it was probably more like 3 cups, but that was plenty.

I made the mistake of making this in a round, deep casserole dish. I think because it wasn't a thin layer like it would have been in the 13 x 9 pan, it took about 50 minutes to firm up instead of the 20 it was supposed to. Also, the cheesy crust on the top was the best part, so the other dish would have produced a lot more of that. Nonetheless, it was really good.
 
Going to the Melting Pot tonight. I have been planning this "cheat" for about 2 weeks. I know it is diet blowing but it is just one night and I will be back on it tomorrow. I am planning to enjoy myself and some great food, but also to not "pig out" like I normally would. I will try to enjoy everything and eat enough to be satisfied but not so much that I am bloated and stuffed. Even doing that would be a huge change for me.

That is my plan anyway;) . I guess I will report back on what actually happens. . .
 
Hmmmm, well. I won't report on what I ate since I don't want to get stoned ;) Let's just say that it was a very good meal. I ate a bit more than I intended to, but less than I probably would have several weeks ago. And I ate more vegetables than anything. :woohoo: Not to say that I didn't enjoy a lot of cheese and chocolate.

Tomorrow is a new day and will be filled with water activity. Maybe the activity will counteract the food.

I had a pretty good day yesterday, eating-wise. Breakfast was scrambled cheese eggs and tea with cream. I had a decaf Americano at Starbucks mid-morning when I met my friend there, and lunch was leftover cheeseburger pie and salad. I made a creamy chicken and leek strew for dinner that was really good - new recipe.

I also went grocery shopping yesterday and restocked my kitchen with an eye for "legal" foods. Lots of veggies, fruits, and yogurts, along with stuff to make a few good dinners this week.

I find with the Somersizing that if I plan ahead, I can make fantastic food at home that we really enjoy, but eating out is a bit of a dilemma, where I'm much more likely to cheat. It's not impossible to eat out without cheating, just a lot more restricting, and plus there are too many temptations on most restaurant menus.
 
Back from my trip, where I cheated too much out of necessity. I will try my best to get back on track. DH will make sure of that.
LB, I've Somersized before. What a great diet plan. It is almost identical to the low cholesterol diet that DH's doc gave him. Very sensible. That's pretty close to what we have been doing for the last couple of months.
Anyway, I'll post what I eat when I have any idea what's in the house.
 
Tomorrow is my cheat day. I can't wait!!!

I think it is deserving... since May 25, I have stayed under 1200 calories every day (including weekends!) and worked out 4-5 times a week. Lost 10 lbs.

This week I have been a little down and discouraged. I think somehow that I should be losing more quickly. Can you tell I am impatient?! I know that slow and steady is good, and will help make sure that everything stays where it belongs (no loose skin or deflated girls), but still, sometimes it gets me down.

I am off of to Great Wolf Lodge for the weekend. I will be sticking with my eating plan as much as I can. I am going to pack some healthy snacks. You all stay healthy without me and I want to see great eating when I get back!!!! :cool1:
 
I'm enjoying a bowl of sugar-free jello with fresh whipped cream right now - yummy!

I did well again today. I had shredded wheat with skim milk for breakfast, unsweetened applesauce for a morning snack, and leftover cream chicken and leek stew for lunch.

We went to see a matinee of Evan Almighty this afternoon (what a great movie!) and the smell of the popcorn just about knocked me over on the way into the theater. I stood there and breathed deeply for a couple of minutes :rotfl2: but I managed to avoid buying any. I had packed some grapes in my bag, so we munched on them instead. Not quite the same, but they got me through it.

I made Paula Deen's Bacon Cheeseburger Meatloaf for dinner tonight, subbing a little parmesan for the bread crumbs. I love this recipe - best meatloaf I've ever had. Ate it with a salad for dinner.

Sharlon, I do really like Somersizing, and I'm always surprised that it doesn't seem to be as popular as some of the other diets. If I make myself cook, the food is fantastic. It's restaurants and movie theaters where it gets harder.
 
Kat, it sounds to me like you're doing really well. 10 pounds since May 25 sounds perfect - roughly 2 pounds a week, right? I've heard lots of times that that's an optimum weight loss for the best chance of keeping it off.

Well, I'm still having my bread slice w/tea in the morning.

Lunch was cherries and milk and a few ounces cheese yesterday.

Today it was a peanut butter and jelly sandwich and banana and milk.

Dinner yesterday was turkey chili w/cheese.....about a cup. and milk.

Today some goulashy thing mom made with turkey, tomatoes, mixed veggies and cheese. And milk.

The big problem is I'm eating chocolates. LOTS of chocolates. I want them darn it! But I've decided after this box, no more chocolates.
 
PaigeyPoo, I know what you mean about the chocolates. I have miniature Reese's and dark chocolate truffles and After Eights all in the kitchen calling my name. They were all gifts for my birthday and our anniversary, and I hadn't finished them when I decided to go back on my weight loss plan, and now I'm trying to decide whether to throw them out or what.

They call to me every afternoon after lunch, though. I had gotten in the habit of a cup of tea and a piece of chocolate or two every day at about that time. So far I've managed to settle for the cup of tea w/o the chocolate every day but one (the first day).
 
LB, can you put them in the back of your freezer? That way you have them as an occasional treat or reward but they aren't readily available.

That's a really good idea, Scrappy.

We've got friends coming over for dinner in a few minutes - I was in the process of making a pot of Chicken Queso Soup when they called to see if we wanted to hang out, so we just invited them over to share it with us.

Hubby and I will just eat the soup (it's a new recipe I found online, completely legal for us), but I'll put out the saltines for them to have with the soup.
 
Okay, so my last few days of eating. I did really well staying on my diet/healthy eating plan at Great Wolf Lodge, and eating out.

The Topamax is an interesting experience. It is now really suppressing my appetite which I thought would be a good thing, but now I am not so sure. I am not hungry most of the time, but the point of feeling a bit nauseous when I eat. But I know I have to eat. If I don't eat then eventually it hits me like a ton of bricks all of the sudden and I am light headed and shaky and starving, and need to eat immediately. Not sure what the happy medium is. But I haven't had a migraine, which is what the med is for so that is good! I am understanding what Paige is going through.

The soup turned out really good. There was just enough for everybody to have a bowl and a half each, which was fine. After dinner we had hot tea and played Catchphrase. It was a fun evening.

Scrappy, I hope you find a balance with the Topamax and your appetite soon. I agree it's not a good idea to just not eat, because your body's going to go into starvation mode and start hanging onto fat cells. Plus, like you said, it makes you feel bad, and that's no good!

Monday is official weigh in day and I am down 4 pounds in 2 weeks!!!!!
 
Yep. No appetite. Means I have to make myself eat and I don't always do that well.

So this morning we were out of bread. I had a banana with my tea.

For lunch I had 4 strawberries. Don't ask me, it was fruit day. Actually, I am not being checked on, and if I'm hurting much (and the last 2 days I have been), it isn't worth the pain to go find food. I called out to mom for the strawberries, she brought me 4.

by 5, I was getting dizzy from no food even lying in bed, so I went into the kitchen and got myself 1/2 cup of beans and a cup of milk.

mom made choc. chip cookies today. Likely I'll have 2 or 3 later, if I can get the kids to bring them to me.

My scale isn't movin'. Must be the chocolates. They are evil.

YAY FOR SCRAPS!!!!!!!!!! :yay: :yay:
