Well that sounds like a nice relaxing trip. We visit Vero a couple times per year before heading to WDW, and that is truly the relaxing portion of our trip.
The resort is beautiful-- Driving over the bridge toward A1A, you can see the golden resort... A truly awesome sight!
The beach can be a narrow, but fine for a walk.
There is a great lounge called the Green Cabin Room. It's an awesome place for a night cap, or to sit on the balcony for lunch and drinks.
The pool is great for relaxing in the sun. Don't forget to give the pool slide a try!
There are two restaurants, Sonya's and Shutters. Sonya's is more formal, and may only be open on weekends. It's a very good restaurant for dinner. My wife and I like to do breakfast/brunch at Shutters. They seem to have very good breakfast foods.
Our favorite place for dinner is the Ocean Grill, located about 10 or 15 minutes down the road. Reservations may be suggested, depending on season and day of the week.
My wife and I also had fun doing a wine tasting at the resort. The charge was $20 each, but it was a lot of fun. We ended up being the only two people that attended!
There are lots of other activities, and they will give you a list at check in. Unless you are traveling with kids, I would stay away from the s'mores campfire thing.
If you're there for two days, I wouldn't leave the resort except for the Ocean Grill for dinner.
The resort is much more of a "self sustaining" resort, as opposed to the HH Resort where you must leave property.
