Please - Tell Me About Vero Beach!

My husband and I are considering a weekend trip to the Vero Beach resort over MLK weekend. Tell me all about the resort. What is the weather like in January? Do you think we would be able to get a reservation now for January? What is the difference between inn rooms and studios? How are the restaurants? What is there to do at the resort and in the area? Which airport is closest? And anything else you can share. We have gone to WDW for a parents only weekend the past 2 Januarys and just spent 2 weeks at WDW in early August with the 3 kids so we would like to make this a more relaxing trip. So, give me any and all info. Thanks!
