I am running a luncheon for the new teachers in our high school and thought since the weather has turned cold a nice chili would be good to have at the luncheon.

Any good chili recipes out there?

It's definitely not an "authentic" recipe, but it's easy & everyone here loves it! I've used pulled/shredded chicken instead of beef (I prefer it that way, but DS likes the beef) and I use great northern or black beans because DH dislikes kidney beans. If I have time to simmer it for a while, I don't bother to defrost the corn. Also, we have a specialty store nearby that has fresh spices. They make a "taco seasoning" mix that I use instead of the chili powder.

Chili

1 lb ground meat
1 can tomato soup
1 can refried beans
1 can Great Northern beans
1/2 bag corn (frozen, defrosted)
1 pkg Taco seasoning
1 Tbl chili powder
1 bag Lipton Rice & Sauce - Spanish flavor
2 c water

Just brown the meat, toss the rest in & let it simmer. You may need to add more water . . . . I just go by how thick it is - or isn't.

I've served it with a variety of things: crushed tortilla chips, shredded cheese - cheddar or taco mix, sour cream, guacamole, salsa, chopped fresh pepper & tomato, etc.

Smoky Sausage Chili

Amount Measure Ingredient -- Preparation Method

1 pound ground beef
1 large onion -- coarsely chopped
2 teaspoons chili powder
2 teaspoons ground cumin
1/2 pound smoked sausage -- sliced 1/4" thick
16 ounces red kidney beans -- drained
1 cup picante sauce
1 cup V-8® vegetable juice
8 ounces tomato sauce
Toppings
sour cream
Cheddar cheese -- shredded
avocado -- diced

Brown beef with onion in large saucepan. Drain.
Sprinkle chili powder and cumin over meat. Cook and stir 1 minute.
Add remaining ingredients except toppings. Bring to a boil. Reduce heat. Simmer uncovered 20 minutes, stirring occasionally.
Ladle soup into bowls. Top as desired.

Super Bowl Chili

1 pound lean ground beef
1 pound lean ground pork
2 15 1/2 ounce cans hot chili beans OR red kidney -- beans
28 ounces can tomatoes -- cut up
2 large onions -- chopped
1 green bell pepper -- chopped
3 cloves garlic -- minced
3 tablespoons chili powder
2 tablespoons sugar
1 tablespoon crushed red pepper
3 tablespoons wine vinegar
1 teaspoon ground cumin
Shredded cheddar cheese
Sour cream -- optional

In a 4 quart Dutch oven brown ground beef and ground pork. Drain off excess fat.
Add the undrained beans and tomatoes, chopped onions, green pepper, garlic, chili powder, sugar, red pepper, vinegar and cumin.
Cover and simmer the chili for 1 hour, stirring frequently to avoid scorching.
To serve: Ladle into soup bowls. Spoon shredded cheese and sour cream over each serving.

Texas Red Chili

Amount Measure Ingredient -- Preparation Method

2 pounds stew meat -- ground once (not twide)
1/2 cup ground red chiles (or plain ground chile
powder -- without the added spices).
1 tablespoon comino
1 teaspoon paprika
1 1/2 tablespoons dried onions
1 1/2 teaspoons salt
1/4 teaspoon Mexican oregano
8 ounces tomato sauce
8 ounces water
1 clove garlic
black pepper -- to taste

Brown the meat and skim off some of the grease if it is greasy, then
add the other ingredients and simmer for 30 mnutes.
Mix 2 level tablespoons of masa flour into 1/4 cup of luke-warm
water. Stir it up good, so there are no lumps. Add that to the pot and
simmer for another 30 minutes.
If you want your chili hot, add 1/2 teaspoon of cayene pepper. You can
leave the cayene out entirely if you like mild chili, or you can put a
whole teaspoon of cayene pepper if you like it really hot.
If you don't have masa flour, you can use corn starch for a thickener.
Try using less though, untill you see how much it is going to thicken the
chili. Mix it with water, just like you would do if you had masa flour.
It the first time you add it, it doesn't thicken it enough, add some
more.

The Chili is better if you let it season for 24 hours before you serve
it.

Serve it in a big bowl, and garnish it with fresh chopped onions and
grated mild chedder cheese.

Ground meat will work too, although it is usually double-ground.
Single ground stew meat is the best.
 
This is a famous recipe I've made several times. It's very tasty and not super hot.



Hard Rock Cafe Chili


Ingredients:
2 tbsp oil
1 large onion, chopped
3 large cloves garlic, crushed
2 -1/2 lb hamburger
2 tbsp tomato paste
2 tbsp worcestershire sauce
2 tbsp barbecue sauce
2 tbsp chili powder
1 tbsp brown sugar, packed
1 tbsp soy sauce
2 tsp celery salt
1 tsp cumin
1 tsp ground black pepper
1 tsp seasoned salt
1 tsp instant dried minced onion
1 tsp instant dried minced garlic
cayenne pepper to taste
15 oz. Can tomatoes, chopped with liquid
16 oz. Can red kidney beans
4 oz. Jar pimentos with liquid
1 medium green pepper, chopped
1/4 cup diced celery

Instructions:
Brown hamburger, drain off fat. Cook onion until softened. Add to hamburger. Add crushed garlic. In small bowl combine tomato paste, worcestershire sauce, barbecue sauce, chili powder, brown sugar, soy sauce, celery salt, cumin, black pepper, seasoned salt, minced onion, minced garlic and cayenne pepper. Mix well. Add to hamburger mixture. Bring to simmer over medium heat, cook, stirring 5 minutes. Drain and rinse kidney beans. Add to hamburger mixture along with tomatoes and their liquid. Reduce heat to low. Cook, covered, 15 minutes, stir occasionally. Add pimentos and liquid, green pepper and celery. Cook, uncovered, 5 minutes longer, stir occasionally.
 

I was planing on making both.

Chili Non Carne

Amount Measure Ingredient -- Preparation Method

1/4 cup chopped onion
2 cloves garlic -- minced
1 teaspoon olive oil
2 tablespoons chili powder
1/4 teaspoon basil
1/4 teaspoon oregano
1/4 teaspoon cumin
2 cups zucchini -- finely chopped
1 cup carrot -- finely chopped
42 1/2 ounces canned tomatoes -- drained and chopped
15 ounces kidney beans -- undrained
30 ounces kidney beans -- drained and rinsed
chopped onions,tomatoes, green peppers -- garnish

In large pot, saute onion and garlic in olive oil. Add a splash of water and cook until soft.
Mix in chili powder, basil, oregano and cumin.
Stir in zucchini and carrots until well blended. Cook for about 1 minute over low heat, stirring occasionally.
Stir in chopped tomatoes, undrained kidney beans and drained kidney beans.
Bring to a boil. Reduce heat and simmer for 30-45 minutes or until thick.
Top with chopped onions, tomatoes or green peppers.
 
If I'm pushed for time...I reach for Fantastic brand vegetarian chili...(less than $2 per box)...you just add 2 cans of beans and 1 can of tomatoes.........this is available in most large grocery stores and makes excellent chili...probably about 6-8 servings.

My favorite homemade veggie chili:

2 Tbsp. olive oil, heated
1 medium onion, sliced and chopped
1 large bell pepper (color of your choice), seeded and chopped
1 large jalepeno pepper, seeded and chopped
1 cup beer or veggie stock
1 13 oz can crushed tomatoes
1 14 oz can black beans, rinsed and drained
1 14 oz can dark red kidney beans, rinsed and drained
1 can vegetarian refried beans
1 Tbsp. ground cumin
2 Tbsp. chili powder
1 Tbsp. hot pepper sauce
1 tsp. coarse salt

Saute onion and peppers in olive oil for 3 to 5 minutes or until veggies are softened.
Add remaining ingredients and simmer for 5 to 10 minutes or until slightly thickened.

This is :bounce: :bounce:

Top with shredded cheese, sour cream, etc.
 
I have a large crew to feed so I do alot of my shopping at the discount grocers......like Aldis, and Marcs dont know if you have either but it save tons of money.You may try that if your doing alot for the teachers.

3 pounds of ground turkey browned
2 large onions chopped added to turkey while browning
3 green peppers chopped added to turkey while browning.

Drain meat mixture....

Add 2 cans of mexican kidney beans, one can of regular kidney beans, 2 cans of tomato soup, one jar of medium salsa, 3 cans of diced tomatoes, and 3 package of Aldi brand chili seasoning. Or if I cant get that then I put in Chili powder to taste. Add some black pepper. This makes about a 6 quart pot full. Simmer for several hours. At least two to make it the best!

I place bowls of fresh toppings out...tomatoes, chedder cheese grated, onions, sour cream. This way everyone gets their favorite version.

Using turkey is a great low fat way to go. Esp with all the people watching their weight nowadays.

You could make this the day ahead then put it in a crock pot the next day at school for the teachers. Just give it enough time in the crock pot to heat through before serving.

how about white chili, this is my favorite.

4 c. diced cooked chicken breast
3 cans white beans
3 cans chicken broth
2 med. onions, chopped
2 cloves garlic
2 (4 oz) cans green chilies, mild chopped
2 tsp. ground cumin
1 1/2 tsp oregano
1/4 tsp cayenne pepper

Combine beans, broth, garlic and half the onions in a large pot. Bring to a boil, reduce heat. Saute remaining onions in oil until tender. Add chilies, seasonings, sauteed onions and chicken to soup. Mix thoroughly and simmer 1 hour.

Optional: serve topped with grated cheese, sour cream and salsa
