Please help with ticket questions

Hello everyone! My husband is not a ride or theme park person typically but he loves Star Wars and is excited to see the new Galaxy spot in Disney so we are going for a weekend in early May. We are only able to do one day which is fine because we only are going to that park. I love Hollywood Studios so I can't wait! When I've done Disney in the past I've done a week and had weeklong passes. This trip will be very different and so I need some help!

Can anyone explain a one day ticket to me? If I buy the one day ticket for Monday can I still change the date a couple of days before in case the weather is better on Tuesday? Can I book fastpasses for a one day ticket? When or how soon can I do that? If I buy them for May this week can I register the tickets on my Disney Go account and then choose rides for fastpass? Also we may want to do one of the waterparks but I'm not sure as it depends on weather and such. Is it cheaper to just get parkhopper plus or buy park tickets AND waterpark tickets? Can I even get a parkhopper plus for one day or does it automatically have a day added on?

I'm sorry for all the questions! I am looking at the different tickets but I'm finding it confusing. Thanks for anyone that can help!
 
You can make changes to your tickets, including your ticket dates, prior to midnight ET of the day before your ticket’s first valid use date.

Yes to booking fastpasses. If staying at a Disney property or participating hotel you can book your fast passes at 60 days, otherwise, 30 days, done through My Disney Experience.

A one-day water park ticket is a bit less expensive than adding the hopper plus to a one day ticket.
 
You can purchase a one day ticket online. Direct from Disney is your best option for a one day ticket. You can change the date of your ticket, but it may impact the price. If your original date costs less than the new date, you will have to pay the difference to change to the new date. However, if the new date costs less, you do not get a refund of the difference. Note that if you change the date, you will have to cancel any original fastpasses and book new ones for the new date. If you purchase online, the tickets will automatically be added to your My Disney Experience (MDE) account and you will assign each ticket to a person in your account.

Like any other ticket, you can book fastpasses 30 days in advance if you are not staying at a Disney resort or 60 days prior to check-in if you are staying at a Disney resort.

The parkhopper plus add-on for a one day ticket is $80. A water park ticket is $69. (both prices before tax) If you don't want to actually hop to another theme park, you are better off just buying a base one day ticket and a separate water park ticket.
