I have similar ride issues, though not as intense as yours. Remy was horrible. I had to basically ride with my eyes closed. Way worse for me than Star Tours, which makes me pretty nauseous. I had no problems at all with MMRR. The one time when MMRR simulates fast motion on the screen, theres no discernable physical motion, so I think that's why. It was just like watching a cartoon on a large screen.I get motion sickness, no vertigo. I have to close my eyes the entire time I'm on Star Tours. FoP was a little better for me - I was probably 50/50 on eyes open and shut. Any rides that ACTUALLY travel like 7DMR or Space Mountain, I'm fine on... it's just those simulated rides. I'm hoping Remy and MMRR isn't too bad, especially MMRR as I've been looking forward to it. Worst case scenario, I just close my eyes and keep my head down.
We're going to Universal too and honestly, I'm not planning on riding much there. It seems like all the rides are either Star Tours type rides, but worse, so I'm not going to risk it, or thrill coasters, which I'm terrified of.
At Universal, you should be able to ride these without a problem:
Flight of the Hippogriff (coaster comparable to 7DMT or BTMRR)
The Hogwarts Express (both directions)
E.T.
Men in Black
Kang & Kodo's Twirl 'n' Hurl (spinner ride like Dumbo)
One Fish Two Fish Red Fish Blue Fish (another spinner)
The High in the Sky Seuss Trolley
Poseidon's Fury (Actually not a ride. It's a walkthrough attraction.)
Woody Woodpecker's Nuthouse Coaster (kiddie coaster)
You *might* be ok on:
Revenge of the Mummy- It's technically an indoor roller coaster but I don't think it has any big drops and I don't *remember* any screens.
Escape from Gringott's- Again, indoor roller coaster with no big drops, but there are portions with screens. Usually you're not moving too much when you're looking at the screens. The very beginning seems like there's going to be a big drop because you get tilted downward and wait to drop but it's really not bad.
Skull Island: Reign of Kong- It has screens around you in the ride vehicle but they didn't affect me at all, maybe because my focus wasn't in one place... Idk. But it might be worth a try. I believe Fast and the Furious is similar)... not that most people would recommend riding Fast and the Furious

Jurassic Park River Adventure- Similar to Splash Mountain, but the hill might be a little steeper.
Popeye and Bluto's Bilge Rat Barges- It's similar to Kali River Rapids, but you get pretty consistently soaked.
Ripsaw Falls- I've never ridden but it's a log flume ride and gets you even more soaked. You have to really like being soaked....
Storm Force Accelatron- If you ride Mad Tea Party then you can ride this. Almost identical.
Hagrid's Magical Creatures Motorbike Adventure is a wild card I think. No screens, no big drops, but it throws you around a lot at high speeds. It's basically nonstop. I thought I'd be fine on it since physical motion doesn't generally bother me but I felt a little icky when I came off of it.
