please help me figure out when to make a PS for yatchsmen?

My girlfriend saw the steakhouse on the newest travel channel special and now is dying to eat there, but my problem is trying to fit in either illuminations or downtown disney afterward, so I was wondering if I wanted to be out the door by 9, but still have a nice dinner where we don't feel rushed, any suggestions as to when to make the PS for?

DH and I dined there on our recent trip for our anniversary and loved it.
We had a PS for 7:00, but arrived about 15-20 minutes early(I always allow 1 hour when traveling from resort to resort). We were seated within minutes and done by 8:00. This gave us plenty of time to walk leisurely to Epcot and take a bathroom break before staking out a spot for Illuminations. We walked all the way around to Italy before grabbing a prime spot and it was still only about 8:30.
I guess in general I would make a PS about 1 1/2 - 2 hours before the time I wanted to be done, just in case there is a wait to be seated.
