Planning our 2 night trip & looking for suggestions

Hi fellow adult travelers! DH & I decided to pull off a last minute Disney trip for two nights in April, right after the Spring Break crowd. We are staying at Pop Century and have two day park hopper passes from a friend of ours who works for Disney. (this means no fast passes until we arrive in the park) I don't want to over plan this trip but do like to have a list of things we want to try and accomplish while we are there and would like some suggestions. Since we normally do week long trips, this is a change for us.

What are some quick services places we should try? I don't want to lock us into sit down reservations and also trying to keep this trip at minimal costs.

Are there anything at the resorts in April worth seeing?

I think we will only plan to be at Epcot and MK but may swing by HS to pick up a limited time popcorn bucket for our friend.

Have you ever done Flower & Garden at Epcot? Worth the trip alone!! I did it with a boyfriend a couple of years ago and I so loved it. Epcot is so beautiful and now they have food kiosks around the world showcase. Excellent food! Plan on spending some of your $$ there! It's almost as good as food & wine.
 
Oh and if it's early April then the huge decorated Easter eggs may still be out at the Grand Floridian!
 
My favorite quick service restaurant in MK is Columbia Harbor House. Good food that isn't burgers and fries. Plenty of seating upstairs. Great atmosphere. Favorite QS in EPCOT is La Cantina de San Angel in the Mexican pavilion. Great little waterside spot.
 

I am with @aprilnmay with Columbia Harbor House. If you are in burgers and fries though, Cosmic Rays Starlight Café is in a great location and has huge portions. I often share with DH. Our fave QS at Epcot is Sunshine Seasons in the Land Pavillion

I did read flower and garden festival will be going on. We have never been. We were thinking of heading to Epcot on our arrival day so we would be there late afternoon and evening. Are the flowers still easy to see when it's getting dark? Are they just located throughout the park?

The Easter Eggs sound spectacular. I wonder how quickly they take them down? We will be there the 14th-16th.

Thanks for the tips on CHH in MK. We have never eaten there but I really dislike all the burger and fry places and we don't really like many eateries in MK so I think it's a definite contender for us. Epcot quick service is pretty easy because we will eat almost anything in world showcase.

Also, we are thinking of breakfast for the day we leave. I really would like a Tonga Toast fix but not sure if we should just visit captain cooks or go for a splurge at Kona. If Kona is worth the extra $$ then we will do it but if it's the same portions then we will likely just go to captain cooks. Thoughts?
