Planning for Jan Trip: DH says it's a go! Do you have advice?

We could go every year to WDW! Last year we did something different but in 2003 dh agrees with me and 3 kids (ages 5-10) to do WDW again.
What do you think of our 14 day plan?
7 days WDW
3 days Universal

No decision on where to stay.
We loved Dixie Landings and Sheraton Vistana Villages the last two times. With energetic kids we stay in the parks all say but hit the bed by 9 or 10 and get up early. Mom and dad stay up until 11 or so, so the extra room in a jr suite is nice for us.

Any new experience would be nice. I think Sheraton Safari looks good. I looked at DreamsRus page on it.
