Any glaring mistakes, suggestions, comments, questions, OMG what were you thinkings?
Just want to make my husband as much a Disneyholic as I am.

Your ressies look great to me! I know I'd be hooked. (Er, AM hooked!)

(ETA: I canceled a 4:05 at Garden Grill on 11/22 when I was able to snag Le Cellier. Looks like you got it! :))

The only thing I'd be concerned about is getting from Fantasmic (which ends around 7) to Cape May for an 8:00 reservation. If you have a car you should be fine, but if you don't you may be contending with huge crowds all leaving DHS at the same time and trying to get a bus.

Rose & Crown 7:50 just for dessert & Illuminations

I've heard some reports that Rose & Crown requires a real meal to be ordered in the evenings during Illuminations. I did not have any experience with this though... I've just read about it on the boards.
