Planning first trip together

I've been to WDW four times, always with a show choir on tour, always staying in the All Star resorts, and always in August. My husband has only been once, when he was eight. WDW was only the MK then.

We're planning our first trip together and his first real trip. He's a professor so we can only go during the holidays (never possible because of family stuff), his spring break (early March), and May-August. The summer's just so hot down there and I'm not good in the heat, so we were thinking of going this year during his spring break. March 5-11. Six day park hopper with water park addon (he loves water slides) and probably the dining option, because neither one of us has ever eaten at any of the nice WDW restaurants.

Are we insane? Will it be crazy crowded then? Or will it be possible to work the Early Magic Hours and the six days we'll be there to make our trip doable and not merely a frustrating, crowded experience?

We can't afford a luxury resort during peak season and were thinking of staying at the Port Orleans Riverside. We don't have kids yet and would like something slightly quieter if at all possible. Am I reading the reviews right? What I'm reading makes me think the POR might be the best choice of the Moderates for us but I'm not sure.

Any advice you obvious WDW geniuses can give me would be so very much appreciated.
