Places to "escape" within parks?

At MK - there are seats by Pete's Silly Sideshow (the M&G area for Minnie/Daisy/Goofy/Donald). This is shaded and usually quiet. In a pinch - the restroom area by Pirates can be a bit lower traffic. Tortuga Tavern is also open for seating - and after it closes for lunch - it's usually a ghost town. And there are a couple benches on the backside of the castle (if facing the backside of the castle as if you could look at Main street) - on the right - in an alcove behind the shop that sells princess attire - there are a couple benches by a SOTMK portal. There's been construction in that area lately - but because they are keeping that portal open - only those of who play that game notice it's there. Now - when the construction is gone - those benches might be busier.

Also not mentioned yet - if you take the walkway between Test Track and Mexico in Epcot - this is pretty quiet. Depending on the time of day - there may or may not be shade. There aren't any benches I can remember - but there are a couple of spots with low walls folks sit on. And that area by the Figment bathroom is a ghost town (well, unless my hyper niece is blowing off steam in that area - she loves that area for some odd reason!).

HS - the area by Watto's Grotto and LMA is really quiet. It's a tad busier right before or after a LMA show - but still pretty quiet. Streets of America are quiet. Except at meal times and park closing times - the area behind the Frozen show building and in front of the cafeteria can be quiet. When the Monster's Inc M&G isn't going on - that area is quiet.

Last resort, don't forget there is first aid stations all over the parks to duck into. They are clearly marked on the maps

My daughter hung out in the Hall of Presidents in MK. Not sure if you can eat in there, but it is air conditioned with seating and it's fairly laid back.

1) The show
. . . is 22-minutes long
. . . comfortable padded seats
. . . relatively subdued lighting inside
. . . no FP's, and only a few benches for seating available while waiting for the next showing
2) No food or drink, and they even have receptacles available before you enter the theater.
