There are probably restrictions on the shows - as those are performances, but generally if that is the case they will post a sign and/or make an announcement.
One set of pictures I always take is the room! I get a front desk shot, the door with the room number, and the various angles. Although I do this for all vacations it is especially fun at Disney because invariably when we look at the pictures later there are hidden details we hadn't seen.
I also try to catch the "unusual" things - like kids looking at a map planning the next day, or someone konked out at the end of a long day. One of my favorites I took a couple of years ago when DH and the two kids are sitting on this out of the way bench after coming out of Space Mountain. DH has the park map spread on his knees, DS is intently studying it as well and DD is staring off into space. It is a good picture of the 3 and I just had to label it "Are we Having Fun Yet?"
So as someone said earlier SHOOT AWAY - you never know what will be the favorite picture.
And, take a look at the last trips to see if there are some that you took on both trips. You may want to seriously think about making those a traditional shot to see development or growth over the years. The one like that I always take is with the castle at MK in the background as you're heading towards Liberty Square (?) - you know the one that has the photo op sign and the castle without a lot of other stuff in the background is perfectly framed. I also like to take an opening shot down main street from the train station upper level.
Well, I guess you get the idea, take lots of pictures!

The crazieset thing I ever heard was one day I was picking up photos from one of our early trips (before I got into scrapping and didn't have LSS developing). I think I was picking up 30 rolls or so and another woman was flipping through ONE roll of prints saying to her friend, "it was all I could do to take this roll - the kids wanted me to take pictures of everything at Disney World". All I could think was those poor kids, I hope they have good brains because the memories certainly weren't captured on film.
