what kind of pickles do you like. What about other pickled items? I am making and selling pickles for our local farm markets this summer. They will be refrigerator pickles, not canned and not heated so they stay crisp. I am planning on offering a dill pickle, a sweet pickle, a hot and spicy pickle. I also have an asian style pickled pea pods, five spice pickled cherry and tarragon asparagus. Any suggestions? What do you think would be a fair price?
 
I like bread and butter pickles. They have just the right amount of sweetness for me.
 
Dill and Crisp. Doesnt matter the kind, just as long as it is Dill and Crisp
 

I love those huge kosher deli pickles. I can eat a whole one at one sitting.

I kind of like bread and butter pickles if I am in the mood. But what I really like is the pickles I make myself. They are heavy on lime and garlic with hot peppers in the brine. :thumbsup2

I only like sour pickles. Unless it's relish, then it can be sweet!

My one recipe is for sour garlic dill. I was kind of thinking too sour too much garlic. But I"m going to test them to see if other people like them. I will be putting out a plate of samples of everything.

I don't know why, but I don't like dill pickles, but I wish I could taste all of the ones you are making :thumbsup2

I love the big fresh kosher deli ones but since we don't have them here Claussen is ok. I also love pickled eggplant, which are mostly vinegar and pickled gardenia salad which contains cauliflower, sweet peppers, carrots & olives. I would love them fresh:goodvibes

I will look into the eggplant. It's plentiful here in the summer. I am planning on doing a gardinier. DH loves this on sandwiches.
 
I LOVE all pickles (I'm Polish, what can say, it's in my blood) except sweet. Sweet pickles are just wrong! Just the smell of sweet pickles make me a bit nauseous.
 
I love them with lots of dill, little garlic, little sour, & very crunchy. I prefer mine with apple cider vinegar. I can't stand bread and butter. Twice this year we've messed up and got them and had to give to my mama who loves them. I know some people who eat pickled eggs and pickled okra.
 
You can have crisp pickles that have been water bathed or pressured. There are a LOT of recipes that will produce this, it's mainly soaking the prepared cukes in lime and alum that will get the crispness (and the good tartness).

Now, for two old recipes that are served as relish in my family.

I've never known anyone to turn a nose up at those two recipes!

I've also got a 14 day pickle recipe that you make in a small butter churn around here somewhere. It requires no cooking, just a lot of alum and changing of water on various days. You could probably find it on the web, it's pretty popular in some places. The good thing is that when you're done, you just put a saucer on the top of the crock and get pickles out whenever you'd like, but you can also can them.
 
How about a dill pickle relish for hot dogs? I'm always looking for one as I don't like the sweet relish, but can never find any. A nice, crispy, refrigerator dill pickle relish would be awesome!
