Since, was a pretty warm day here where I live, no one really wanted hot tea. I made some ginger tea lemonades instead. It's a really refreshing drink and it went well with the items on my menu. Here's my teapot just for show.

My 3-tiered server was too small to hold all the goodies, so I went with some serving trays instead. I stuck to my original plan for the sandwiches. I made open-faced cucumber sandwiches on toasted, thinly-sliced French bread slices, egg salad, chicken salad, and mini butternut squash and caramelized onion galettes. May I just say that I HATE WORKING WITH BUTTERNUT SQUASH!!!!!!!!

Seriously, it is such a pain to peel and chop. However, the end result made it all worthwhile. Those mini galettes were soooooo good!

I decided to go with a slightly different dessert menu. Since I already had sweet potatoes and pecans, I decided to add other sweets that complemented those flavors. I made mini sweet potato cheesecakes, pecan tassies, mini chocolate cream puffs and gingersnaps. I really wanted to make some sort of scone or cake, but I didn't have enough time. I figured that I already had enough sweets.

Okay, it's 8am here and I think I could eat that entire tray of sweets!!! Do you have your recepie of the sweet potato cheesecake anywhere? I'm a huge sweet potato pie fan-- and a cheesecake fan-- I can only imagine what they would taste like!!!
Oh and you made my favorite thing- pecan tassies!
