I am looking for a simple and quick peanut butter fudge recipe. It is for a project for my 4th grader. She needs to be able to make it herself with a little help from me. Thanks so much!

I don't have it in front of me, but if you go to AllRecipes.com and search for Creamy Peanut Butter Fudge, there is a GREAT recipe. I know it's butter and sugar, then PB, marshmellow creme and vanilla. You cook the butter and sugar a certain amount of time, not to a temperature, so you don't need a candy thermomater. I went ahead and searched it for you. Also, I like to put it in a jelly-roll pan instead of a 9x13. Makes a lot more that way! ENJOY and GOOD LUCK on the project! Michele :wave:

Creamy Peanut Butter Fudge

INGREDIENTS:
4 cups white sugar
1 cup light brown sugar
1/2 cup butter
1 (12 fluid ounce) can evaporated milk
1 (7 ounce) jar marshmallow creme
1 (16 ounce) jar peanut butter
1 teaspoon vanilla extract

DIRECTIONS:
Grease a 9x13 inch baking dish.
In a medium saucepan over medium heat, combine sugar, brown sugar, butter and evaporated milk. Bring to a boil, stirring constantly, and boil for 7 minutes. Remove from heat; stir in marshmallow creme until well incorporated and melted. Stir in peanut butter and vanilla until smooth; spread in prepared pan. Let cool before cutting into squares.
 
The easiest recipe of all is to take a can of sweetened condensed milk and 12 ounces of peanut butter chips and melt them together in the microwave. Stir until blended and pour into a buttered 8 x 8 pan. Super easy and really good!

Does it have to be strictly peanut butter, or can it be chocolate-peanut butter?

My best friend's recipe is a slight variation on the one posted by HunnyPots.

Heat one can of Eagle Brand Condensed Milk on low heat in a saucepan. Add a dash of salt. Once it's warm, add 18 oz (approx 2-1/2 cups) Reese's PB Choc Chips (throw in an extra handful of just the chocolate to help the fudge firm up more).

Stir 'til smooth then remove from heat. Stir in 1-1/2 tsp real vanilla extract, then turn out into a pan lined with wax paper. Throw it in the fridge to allow it to set up -- it's delicious and takes about 10 minutes!!! :)
 
When read your inquiry was for your daughter to make this recipe herself I had to add this word of caution:
When adding the Vanilla do so AFTER the PB because it can sort of explode
in your face if it hits the really hot sugar mixture. Please be very careful.

I use a variation on this recipe, too! It's one can of sweetened condensed milk, one bag of choc chips and one of the small jars of peanut butter. Melt it all together in the microwave for about one minute. Stir til the chips aren't lumpy anymore...you may need to nuke it another 30-60 sec, depending on your microwave.

For Rocky Road fudge, leave out the peanut butter, and melt the milk and chocolate. After stirring to combine, add mini marshmallows and chopped pecans.

For mint chocolate fudge, use mint chocolate chips or reg chips and just a couple drops peppermint extract (to your taste preference)

You can use the fat-free sweetened condensed milk also...I don't think it tastes any different!
