Pasta with Turkey Sausage and Spicy Tomato Sauce
1 pound Rotini, Twists or Spirals, uncooked
8 oz. Italian-style turkey sausage, casings removed
1 large onion, chopped
1 medium green bell pepper, ribs and seeds removed, chopped
2 cloves garlic, minced
1 28-oz. can tomatoes, chopped, with liquid
1 8-oz. can tomato sauce
1 4-oz. can mushrooms, drained
1 1/2 tsp. dried basil
1 tsp. dried thyme
1/2 tsp. chili powder
1/2 cup shredded, part-skim mozzarella cheese
1. Prepare pasta according to package directions; drain.
2. In a large skillet, cook sausage, onion, green pepper, and garlic over medium heat until sausage is no longer pink. Drain. Stir in tomatoes, tomato sauce, mushrooms, basil, thyme, and chili powder. Simmer uncovered 10 minutes. Pour sauce over pasta and top with cheese.
