Park reservations for adult trip

My husband and I are going November 8-12, Monday to Friday. The only plans are Star Wars rides and Epcot Food and Wine fest. What are your thoughts on this reservation plan:

Monday-Epcot (we’ll get there around 3:30)
Tuesday, Wednesday, and Thursday- reserve HS (hoping for those boarding passes) and then hop to Epcot at 2.
Friday- Epcot (departing around 5 pm)

Have there been any days Epcot has not been available for hopping?

Thank you! I haven’t been paying much attention to availability this year. I’m used to hopping with no restrictions
