Going to the land of Mickey 9/23-9/30 on DDP. Couple of questions (ok maybe a few):

1. Day 3: We (me, DH & DD 4yo) are doing the princess breakfast at Epcot. Spending the day there and then dinner at Coral Reef. Is Epcot interesting enough for a 4 year old to stay there all day?

2. Same question for Animal Kingdom except it's late breakfast OOP at Rainforest Cafe with dinner at Cape May Clam Bake.

3. Is it worth going to Whispering Canyon for a meal on our "free" day or should be go to Downtown disney?

4. Where is the best place to see Ariel/Little Mermaid characters?

5. Doing the following character meals: Day 1 - CRT dinner, Day 2 - Chef Mickey's breakfast - Day 3 - Princess Storybook breakfast, Day 7 - Cinderella's Gala Feast - Day 8 (final day) Character breakfast somewhere. Question: Is it overkill with all these character meals? I'd like to get in a good mix of characters - although my DD is big time into the princesses.

I wouldn't stay in any park all day with a child that age. Especially not your dates, it's going to be very hot. Plan on taking a break mid-day. Go back to your hotel, rest, swim, cool off. Then go back to the parks refreshed for dinner and whatever evening things you have planned.

I'm pretty sure you can catch Ariel in Fantasyland in MK.

AK you should be able to do in half a day.
 
The best place to find Ariel is in her Grotto. Check the MK map, and get there early! There has always been a long line every time we've been. Have a great trip!
 
Epcot is huge and there is plenty for everyone to do all day. My DS(7) really enjoyed playing in the sprinklers/fountains, he got soaked, but dried in about 10 minutes. We spent nearly an hour watching him play in the fountain! Might want to bring a change of clothes for little ones, but playing in water is always fun and relaxing.

My kids are older, but we still all get very tired. We arrive at the park before it opens, then go back to hotel for a rest around 2-3pm when it starts getting hot & crowded. We then head back to park around 6-7pm for our late dinner (8-9pm) and to enjoy the cooler evening. Everyone enjoys our afternoon naps, they can swim at the hotel, take a shower, put fresh shoes & socks on. Makes the evening much more enjoyable.

Coral Reef Restaurant was great. My kids loved it.
 

We took our 4 yo DD last year and she really needed a break each day in the afternoon to rest. Even though there is so much to do they do eventually need some time to relax and recharge. We would go back to our room each afternoon and swim and then go back a little later to watch the parades and fireworks. I way underestimated how much she would enjoy Animal Kingdom - she had a ball there! There were lots of things to entertain her (she loved the Boneyard!) - She liked the Future World portion of Epcot (mostly the hands-on exhibits) much more than World Showcase. From most favorite to least, this is how I would rank the parks for her:

1. Magic Kingdom
2. Animal Kingdom
3. Epcot
4. Disney-MGM

We are going again in August and cannot wait!!
