Potato pancakes.

Do you call them by some ethnic name?

I suppose the most common is latke.

I call them placki ziemniacnaze (PLATZ-key Jim-yah-CHAN-neh) or just platzkey. My pronunciation is close but not authentic Polish.

I made some Sunday with a few potatoes that were starting to go.
 
Funny, we just had these the other night. We eat them with applesauce, and we call them Lockess. That is a rough approximation of how we transplanted South Philly people pronounce it. I'm sure we mean to say Latkes.
 

I don't call them anything as they have never been something in my life. I am actually not sure that I have ever had them!

My mother called them potato cakes, so that's what I call them. I've never heard of serving applesauce with them. We don't eat applesauce, but I'd be willing to try it the next time I make them.
 
Always been potato pancakes. One of my Uncles loved to make them.
 
Potato pancakes here. Haven't had them since I was a kid (long time ago!)
 
I always put onion in mine. The other day I added shredded carrot too. If I have it, I might also add shredded zucchini instead of carrot. Plus I usually put garlic powder and marjoram in the batter. Sometimes cumin for a zestier taste.

Both applesauce and sour cream go well with platzkey, but not at the same time. Salsa, ketchup, or whatever you like with hash browns are great too.
