This makes me wonder if I ever had the dish being described here. My mother made them with leftover mashed potatoes. I think all she did was dip patties into egg, then flour, then fried in the skillet. I wouldn't describe the beaten egg as batter.

Mine resemble hash browns. I shred potatoes, onion, and other veggies with a box grater, mix in a beaten egg, a tablespoon or two of flour, and seasonings. “Batter” might not have been the best word to describe it. They’re not liquid like regular pancake batter, although some liquid seeps from the potatoes while mixing.

Another variation: skip the onion and add cinnamon sugar instead of other seasonings before frying.

The “potato pancakes” my mother used to make sound like the same thing as yours. The photos of latkes I’ve seen look yummier, but I’ve never had one.

Do you keep kosher? Is it OK to eat them with sour cream? That's how we love them.
It is kosher, and very common, to eat them with sour cream. There's a perpetual argument in the community over which is better, sour cream or applesauce. My DW and I are on opposite sides, and we like to laugh about it.
