Doesn't really matter. You should be up on deck, so you can move about to see everything.

The main difference is that port side will have ocean views on sea days while land will sometimes be visible during sea days on the starboard side.

Only on the Westbound PC, on the Eastbound, it's the opposite.

For actual canal transit it really doesn't matter. You won't know which side of the locks the ship will be on until you actually enter the canal. Even then, it really doesn't matter because you'll want to look out over both sides as you pass.
