If you ask for no fries (and do not substitute fruit), they will take $2 off your order - at least they used to. You could have one person get fries and one person get fruit.
In MK, I like to get a baked potato in Liberty Square - outside near the CHH and across from the RB ride. You can get fruit cups there, too. CHH is also a good place to get some healthier options, rather than burgers. Cosmic Rays is also good.
In EPCOT, Sunshine FF in The Land offers healthy options a la cart. The bakery in France offers good croissant sandwiches!
In AK, my family likes to eat at Pizzafari - they have good salads and pizzas.
In HS, there's the whole area near RnRC that offers healthier options a la cart and Starring Rolls has sandwiches (no fries).
We usually eat CS in the parks, and one lunch or dinner that is in a restaurant for something different as a "splurge".
I carry granola bars or something little in case, but we usually find something to satisfy everyone when walking around the parks. Part of the fun is getting the food in the parks, but we do try to make choices that are not a lot of $ and healthy-ish.
But we eat breakfast in the villa and usually lunch or dinner on some days, depending on the schedule.
