How much money are you willing to budget for this? OC has lots of healthier options, but truly organic, sustainable, healthy can get expensive fast. (And, as you can guess, most people don't come to DLR to eat healthy, so options do tend to be farther away from the parks.) Do a search on Yelp! to see if anything interests you. You might want to visit the Anaheim Packing District (think upscale food court).
At DLR, for better quality food and small plates, we like CCR (lounge and dining room) and NR. And if you want to eat healthy outside the parks, stay away from Captain Kidd's!! LOL.
There's a couple of vegan restaurants nearby. We have intended to visit, but havent. One is called Healthy Junk. I don't remember the other, but it was in the resort area.
Also, Fire and Ice is a Mongolian WOK restaurant and I would think it would be as healthy as you choose it to be.

The Lab and Camp in Costa Mesa, as well as SoCo have some really neat places that fit what you are looking for. Those would be a drive though, maybe 20ish minutes no traffic.

I thought about this exact same thing (e.g. Native Foods at The Camp), but it seemed far for just a meal, especially with the OP not having a car....The Lab and Camp in Costa Mesa, as well as SoCo have some really neat places that fit what you are looking for. Those would be a drive though, maybe 20ish minutes no traffic.

Yeah I think no rental will have its drawbacks regarding food. I’ll google it. Maybe I’ll end up with a rental car a day or two in the middle of my stay.
