Our first trip to Disneyland, where do we start??

Buying a package for 4 people to get the room you want, you can still buy the 5th ticket outside of the package if you feel comfortable doing this. Also keep your eyes open for the deals in the Fall.
 
I did check up on the deal Disney is offering this year to earn a free day to a park by volunteering. It's possible we could save our family close to $400 by volunteering. We could earn a 1 day 1 park pass. Would we be better off purchasing a 1 day parkhopper for our second day? Or would we be fine with a 1 day 1 park pass for our second day, also? It looks like there is plenty to do at both parks that would keep us busy for a day...but having never been there I just have no idea!

The "Give a Day/Get a Day" tickets are upgradable! Basically, you can use them as a $72 credit ($62 for kids) towards a higher-priced ticket, like a 3-day hopper. In that case, your 3-day adult ticket will cost $184-$72=$112, and the child ticket will cost $154-$62=$92.

If at all possible, I'd plan your trip to include no less than 3 Disney days. It's hard to fit it all into 2 days.

With Southwest usually the closer you get the more expensive the flight seems to get. You can also change reservations with Southwest for no extra charge except if the flight is more expensive. If the flight is cheaper they will give you a credit for the next time you fly. Southwest is amazing.
 

We just booked to fly from Omaha to LAX the second week of February. Got good flights for about $200 roundtrip on Delta.
