OT-How to cook fish and what kind?

I want to start cooking fish but I do not know how to cook it so that it does not taste fishy or what kind of fish to cook? Sorry this is not budget related. Thanks:yay:

Not sure what kind of fish you like, so I'll just tell you what I cook! :cool1:

I usually buy sole, cod, tilapia, salmon. You can cook the sole, cod, and tilapia pretty much the same way. I put mine in a baking dish, season with S&P put a dab of butter or sprinkle with olive oil throw on some fresh parsley and pop in the oven for about 20 minutes or so. Pretty much until it is white and flakey. You can also top the fish with some breadcrumbs that you have moistened with a little melted butter. This give you a little crunch and a pretty presentation.

The salmon I do on top of the stove so it gets a nice sear on the skin side. I put some olive oil in the pan, season the fish and cook until done.

If you like a meatier fish like a swordfish or halibut I would suggest doing it under the broiler or on the grill.

I also would advise making sure you buy the freshest fish possible. It shouldn't have a fishy smell when you buy it.

We are not big fish eaters but do like salmon. I agree, buy fresh & cook that day for best taste. We put the fillet on foil in a baking dish or on a cookie sheet w/sides. Per my mom's recipe, I spread a thin layer of mayo on top & then sprinkle w/seasoned salt. Bake until fish flakes when you put a fork in it, doesn't take long. Nice, juicy & tender.
 
I normally don't use the microwave for anything, but it is perfect for fish!!! Just season the fish and wrap it in lettuce leaves. Microwave on high power. It should only take 5 minutes or so, depending on the thickness and type of fish. Check it after three minutes. It is done when flakes easily with a fork.
 

I make tilapia by seasoning with lemon pepper and sauteing (I know that's spelled wrong!) in a little butter and olive oil.
 
We just cook it slowly in a pan with a little butter and oil and whatever your favorite seasoning is. Be careful to only turn over once so that it does not fall apart.
 
I ususally broil my Tilapia in the oven....season with s&p, garlic powder, cover with a thin layer of mayo and sprinkle with breadcrumbs and parm cheese. broil 2-3 minutes each side.

For salmon, I use lemon pepper, garlic powder and a mixture of 1/4 cup brown sugar, a couple tablespoons of orange juice and a couple teaspoons of soy sauce...enough to make a paste and I smear that on top of the fish and saute it on low in a skillet. yummy!

I like to poach fresh salmon. Place a large piece of fish into a large non-stick skillet. Put a little water in the pan, some white wine if available, some lemon juice, and sprinkle some Paul Prudhomme fish seasoning on top. Cook over med. low heat until done (ridges starting to separate) and it's perfect. Even my kids love it. Rice on the side and a green veggie or salad.

Any leftover poached salmon is good served over a green salad for lunch the next day.
 
I cook a lot of fish. Here is a favorite

Tilapia fillets in a baking dish
Pour in some white wine
Pecorino/Parmasaean Cheese(the fresh kind) on top. Bake at 350 till brown

Another one:
Any kind of fillet
Frying pan with some EVOO (extra Virgin Olive Oil)
Sprinkle filets with Old Bay seasons and put in pan
Squeeze 1/2 a lemon while cooking on fish

Also a more labor intensive salmon en croute, my DH loves this dish! Yummmmy

This is my kids' favorite fish recipe and it's easy to make. I use cod or haddock, but any mild white fish will do:

1 lb haddock filet (I usually buy 2 lbs for my family) - place in greased baking dish. Coat lightly with mayonnaise. Meanwhile, melt margarine in a skillet; add crushed Ritz crackers, bread crumbs and a bit of dill to margarine to make a crumb topping. Sprinkle over fish. Bake at 350 for 20-25 minutes until fish flakes easily with a fork.

Delicious!
 
Talapia-I wrap it in foil-put lemon pepper on it and cut up some onions. Put it all in foil and bake.

Salmon-little s$p, place in foil, bake. Then I make a dill sauce for it-sour cream, dill, some lemon juice, s$P and a little grated onion. Put sauce directly over hot salmon. Yum! It's so good. Salmon is also good with sauteed mushrooms.
 
I prefer to bake fish - at high temp, 400 or 425 degrees. About 10 min. for a 1" thick pieces. Add 7-10 min. more if frozen. I brush with melted butter that I have sprinkled Seafood Magic in before placing in oven. Always great! Quick & easy.
 
I buy frozen Tilapia. I thaw it and put it on a baking sheet lined with foil and either put melted butter or lemon juice on it. Then I bake it at 400 degrees for 20 minutes. All 5 of my kids love it, it is easy and no mess with the foil.
 
Here's a quick and easy salmon recipe:

Get about a pound of fresh salmon. You can use filets but we
just use the stuff with the skin on it.

Wash that and place it in the cross sections of two pieces
of parchment paper, about 2 feet each (you are going to make
a tent out of the paper that the fish cooks in).

Pour 1/2 cup of lemon juice over fish. You can use fresh
lemons but make sure to use cheesecloth or something to catch
the seeds. Cut up 1/2 stick butter and just place on
salmon. Then, get a salmon or fish rub from the grocer and
pour to lightly coat salmon all over the top.

Make your tent out of the parchment paper (you can staple it
if you want) and then cook for about 25-30 minutes at 350
degrees. The salmon will be pink and will separate easily
from the skin. Eat the meat and discard skin.
 
My dh and I love to grill tuna and salmon. I especially like to buy the huge salmon fillets at Sams Club. When I get it home, I cut it up into servings big enough for our family to eat (usually two servings per fillet). I stick it in a ziploc freezer bag and then pour over Yoshida sauce (also bought at Sams). Pop it in the freezer and the day I want to cook it, I move it over to the fridge and let it thaw in the marinade. Once it thawed, we grill it (or broil it if the weather is bad). Very yummy!!

We like to marinade tuna in Italian dressing (or Yoshida sauce) before grilling.
 
We typically grill fish...especially salmon. Just make a foil packet, maybe put some lemon on it and throw it on the grill...and when it flakes up then it is ready to go. NUMMY!
 
Here are my 2 favorite fish recipes using Tilapia and Salmon:

Parmesan Tilapia - 1 to 2 lbs Tilapia, double recipe as necessary

1/2 cup shreded parmesan cheese
1/4 cup butter, softened
3 TBS mayo
1 TBS lemon juice
1/4 TSP ground black pepper
1/8 TSP onion powder
1/8 TSP garlic powder
1/3 cup bread crumbs

- preheat broiler, line baking pan with aluminum foil ( I also spray Pam on the foil)

- Mix all ingredients together in a small bowl

- broil fillets in a single layer on baking pan, 2-3 minutes per side

- remove fillets from oven and cover one side with parmesan mixture - you need to use your fingers a little to spread the mixture

- place back in broiler for 2-3 minutes or until topping is browned and fish is nice and flaky


Salmon Marinade - can use for up to 1 1/4 lbs of salmon

1/4 cup butter, melted
1/4 cup brown sugar
1 TBS soy sauce - I use low sodium
2 TBS lemon juice
2 TBS white cooking wine

- Mix all together until brown sugar has dissolved
- Reserve a small amount to be used as a basting sauce
- Place remaining marinade in large ziplock bag and add salmon. Leave for at least 1 hr in refrigerator
- Place on the grill


These are both very yummy....and make the fish taste non-fishy. I use these recipes weekly. Enjoy!
