If you are booking on a Platinum day, a Platinum (with the right number of cruises sailed) has to be in each room. So no, if you are Platinum, you can't book a room for a Gold if there won't also be a Platinum person in the room with the Gold.

Seemed like there was still decent amount of inventory this morning. I suspect there will be a lot more today and tomorrow than there were yesterday so I'd say it's a long shot, but that's just a guess.
