One night cash in WDW

We're headed to Vero Beach on Sunday, 8-7. Checking flights to Orlando, they are $90 cheaper per person on Saturday than Sunday. I'm wondering now if it makes sense for my family of four to go a day earlier on Saturday and book a room at Disney then head to Vero on Sunday. We'd save $360 on flights. I don't want to borrow points so I'm thinking of paying cash for a moderate at Coronado. With the Force Awakens discount, the rate is $160.

I thought about purchasing one time use points but the lowest point room is 19 points and $15 per point is pricier than the Coronado. I'm not too fond of the value resorts either which are listed as $120. We would go to the parks Saturday afternoon/evening with our DVC annual passes.

Any other room ideas I haven't considered? It has been forever since we paid cash for a room.

Stay offsite.
You should be able to find a room on International Drive for less than $50 for the night.
Question, how are you getting to Vero and getting around once you get there?

We will have a rental car to drive to Vero.

Do you by chance have any hotel loyalty points to use for a free night offsite nearby? We've used reward nights a couple of times now at the beginning or end of a trip. Just another way to save some cash if you have the option.
