One night AKL stay with one day left on hopper - what to do?

Ok, now that I found out (thanks to you guys) that I have one park day and two plusses left on the old passes, can anyone help me out with deciding what to do? We will be ending our Florida by staying at AKL for just one night. Me, DH and DD-9 haven't been to WDW for over 5 years. We used to go quite often, so we don't really need to re-visit the classics. What new and exciting things should/could we be able to visit during this short time. Since we have the hopper, I thought that we could just "hop" around on one day, doing one or two rides at a few different parks, and hit a water park plus PI on the other day. Any advice would be greatly appreciated.
