Am I able to use Disney gift cards to make an onboard booking deposit (not a placeholder but actually booking our next cruise) or will I have to charge the deposit to a credit card?
I have always been able to. Someone else posted they were not, but that is the first time I have heard anyone NOT being able to use a Disney Gift Card.
I know things change, so I would have a card ready just in case.

I know I've read you can and then I've read you can't so I'm wondering which is accurate...I will definitely have my card ready just in case Is the future cruise desk usually open every day? I'm hoping to book right when we get on board to get it out of the way...

They have been open in the evening of embarkation day on each of my 4 cruises. That's usually when I go ahead and book because there's never been a line on night 1.
Right on Dug - the lines only get longer as the cruise goes on (although the waiting area is pretty comfortable, and we use it to play games/read on our tablets. If there's no line, as is often the case the first few days, I feel comfortable talking over options with the sales folks. As lines get longer I feel that I shouldn't waste time pondering options while others are waiting their turn.
I personally tried to put a placeholder with a Disney gc and they said I couldnt and had to use a regular cc. This was on our Fantasy trip last september. The guy was adamant about it so I had to run up to my cabin and get a regular cc to pay for it. I'm going to try again this trip to see if I can use a gc since its like using cash so not sure why they wouldnt.

Ok, perhaps that is the difference. I always know what cruise I want going in so I'm not messing around with placeholders. Maybe they only allow gift card usage on exact dates and not on placeholders?
