On Food Network. Coconut Sweet Potato Balls? Who made them on TV?

I'm trying to find a recipe that I saw made on the Food Network. It was for sweet potato balls that were covered in coconut. They had a marshmallow in the center. Any idea what show that was on?
 
do you go to foodnetwork.com and do a search? that's how I have found some of the recipes.
 
4 large sweet potatoes
2/3 cup packed brown sugar
2 tablespoons orange juice
1 teaspoon orange zest
1/2 teaspoon freshly grated nutmeg
2 cups shredded coconut, sweetened
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1 large marshmallow per potato ball

Preheat oven to 350 degrees F.
Bake the potatoes until tender, then peel and mash them. Stir in the brown sugar, orange juice, zest and nutmeg. In a separate bowl, toss the coconut with the sugar and cinnamon. Press mashed potatoes around each marshmallow, creating a 2 to 3-inch diameter ball. Roll the balls in the coconut mixture. Bake for 15 to 20 minutes. Watch carefully for the last few minutes of cooking; the expanding marshmallows can cause the potato balls to burst open.

ya know papa deuce....I always see you on here talking about all this great food you are cooking....you are so close to me that I am very tempted to stop by for a snack :teeth:

Well, not all of it turns out great!
Later tonight I am making Boma's Butterfinger Cheesecake, and that should come out GREAT! Haven't ever made a bad cheesecake yet!

Ooops. That is a lie. I once made a SALMON cheesecake that I saw Emerill make..... ummm, not so good! :teeth:

ummmm....I think I would definately pass on the salmon cheesecake!
 
ewwww, salmon cheesecake! I did try my hand at Paula's apple butter pumpkin pie, it wasn't a big hit at our house. Sad too, because older DD was really into making it after seeing Paula do it. It's kinda made me hesitate to try any of her other recipes. Well, time to go brine a turkey!

Well, according to Emeril, there are sweet cheesecakes and savory cheesecakes..... I have to say, while I hated it, a few people took seconds! :rolleyes:
 
my grandmother use to make the sweet potato balls, but rolled them in cornflakes instead of coconut. Mmmmmm yummy
 
Last year at our holiday pot luck, one of the girls was obsessed with Paula Dean and made everything she did on the show. When I asked her about the sweet potato balls she said that it was one of her failures. She said the marshmallow expanded thru the ball and they were all ruined.
It looked so easy on tv. Let me know how it turns out?

Hey, what recipe are you using. Mine is going to be soaking overnight and then glazed with a cranberry glaze. Hope it turns out. :rotfl:
 
Paula warned about the marshmallows. She said you have to be very careful and not overcook them.
I made them years ago and they were great but more work IMO than just a sweet potato casserole.

And what's up with no butter in a Paula Deen recipe? LOL

Did anyone see the man make Bread Pudding on her Paula's Party show? He made bread pudding with Krispy Kreme donuts.

Well, this one is pretty easy, it came on the box the brining bag was in. I bought a $13 jar of mixed spices, it called for using 1 gallon of chicken stock, boiling that with the spices. When they came to a boil they smelled so bad my younger DD was like "eww, what's that awful smell."? I dumped that $20 concoction and mixed this up: 2 qts cold water, 1 cup kosher salt, 1 cup honey (or sugar or other sweetener). Bring to boil, top with cold water up to one gallon. I refridgerated that overnight, now I'm to add that to the bag with 1 gallon of cold water. Sounds easy, no strange spices (that was a mix of rosemary, orange peel pink peppercorns and sage, it was the rosemary and sage that were overwhelming).
