I have a turkey breast roasting in the oven. The cornbread dressing is staying warm in the microwave. The raspberry walnut broccoli slaw is marinating in the fridge. The baby lima beans are cooking on the stove. The low sugar pumpkin pie and sugar free Cool Whip are defrosted in the fridge. I still have to make the gravy, lemon parmesan asparagas, and the garlic steamed green beans.

If you can't tell from the menu, Gabby is on a diet and I am trying to decrease my sugar intake due to being boarderline diabetic. It's a different sort of Thanksgiving meal, but the house smells just as heavenly as always.

I cheated and bought a frozen cornbread dressing. I can never make the stuff from scratch without making enough to feed 20. It's wonderful stuff, but since we didn't do a pot luck at work and it's just the two of us this year, it just didn't make sense to make it....plus, we don't need all the leftovers. I did use an organic raspberry walnut salad dressing on the broccoli slaw. I tasted a small bit of it last night, it's sweet, but not too sweet. It wasn't loaded with sugar, but there is some in there. As for the rest of it, I am working on using as little salt as possible, with the exception of the turkey. I brined it. If it turns out just half as wonderful as the one last year did, we are going to have a great little bird!

Ok, I just wanted to take a little break while the bird roasts before I got into the last minute veggies. We are having a late lunch/early dinner. I can't wait to get it all done and on a plate. I love Thanksgiving! It's a lot of hard work and planning, but it's always a wonderful meal.

Sounds wonderful...when you get a chance, can you PM me the slaw recipe and the brand of dressing, please?
 
Chuck the recipe is super simple. I bought a bag of the broccoli slaw from the veggie section of our grocery store. I rinsed it well and let it dry out pretty well. I cut up some of the longer strands to be a little more uniform and closer to bite size. I picked up a bottle of an organic raspberry walnut dressing from the veggie section of our grocery store too. I have already discarded the bottle and I have no idea what brand it was, but when I go shopping next, I will be glad to report the name to you. I remember that it was labeled as being organic, which is not code for more expensive, it was a glass bottle with a blue cap. Anyway, I marinated the mixture for two days. I drained off the excess dressing this morning and added some sunflower seeds. It was really good. Gabby is a really picky eater, so I worried that it was going to be one of those things that she didn't care for, but would only eat in an attempt to not hurt my feelings, but once she got past the idea of eating pink broccoli slaw, she said it was really good. So, I take that as a small victory. Maggie

Thanks, that sounds easy... I'll have to see if I can find some organic raspberry walnut dressing in the store. Was it a vinegarette type dressing, or somewhat creamy? I tied a raspberry vinegarette one time, and it was awful...but it wasn't labeled organic, either. Was yours in the refrigerated produce area or on a regular shelf in the produce area?

We went to the store a little bit ago to pick up some stuff for our breakfast in the morning. I looked in the refrigerated part of the salad & veggie and found that the brand is Litehouse. It comes in a glass bottle with a blue cap. The product was pinkish red in color and was a vinegarette. I too have tried a few other raspberry walnut dressings and had been rather unimpressed by them, but this one was good, like I would serve it to company good.
I wish you luck in your preparation of this salad. I warn you though, the broccoli turns a pinkish color from the raspberries. It is kinda weird to see the pink strands and then taste the broccoli flavor. It taste good, but the first time, it seems strange. If I was serving it to guests, I don't know that I would say that it was a broccoli slaw unless they asked. I would just say that it was a raspberry walnut slaw and let it go. ;) Maggie
